Artificial Intelligence (AI) technologies such as Generative AI, Image Generators and Large Language Models have had a dramatic impact on teaching, learning and assessment over the past 18 months. The most immediate threat AI posed was to Academic Integrity with Higher Education Institutes (HEIs) focusing their efforts on combating the use of GenAI in assessment. Guidelines were developed for staff and students, policies put in place too. Innovative educators have forged paths in the use of Generative AI for teaching, learning and assessments leading to pockets of transformation springing up across HEIs, often with little or no top-down guidance, support or direction.
This Gasta posits a strategic approach to integrating AI into HEIs to prepare staff, students and the curriculum for an evolving world and workplace. We will highlight the advantages of working with these technologies beyond the realm of teaching, learning and assessment by considering prompt engineering skills, industry impact, curriculum changes, and the need for staff upskilling. In contrast, not engaging strategically with Generative AI poses risks, including falling behind peers, missed opportunities and failing to ensure our graduates remain employable. The rapid evolution of AI technologies necessitates a proactive and strategic approach if we are to remain relevant.

Interesting facts about Mexico
1. A Mexican tamale called the zacahuil is three feet long
and weighs about 150 pounds.
2. Mexico is second only to Brazil in the number of Catholic
citizens.
3. Mexico City is built over the ruins of a great Aztec city,
Tenochtitlán. Because it is built on a lake, Mexico is sinking at
a rate of 6 to 8 inches a year as pumps draw water out for the
city’s growing population.
3. The Holiday
Día de la Candelaria is celebrated 40 days after
Christmas, on February 2nd.
According to Jewish law, it was customary to bring your
baby to the temple 40 days after birth.
Jesus was brought to the temple on February 2nd, and
that is why this holiday is celebrated.
It is also known as Candlemas in English.
4. The Holiday continued...
In some places they celebrate with bullfights and
parades.
Throughout Mexico, people celebrate by dressing up
figures of the Christ Child and take him to church to be
blessed.

5. Food
Many people get together to celebrate this holiday and enjoy tamales with friends
and family.
Rosca de Reyes is also eaten, it is a sweet bread with images of the Christ Child on
it.
Candlemas is also celebrated by a feast called The feast of the purification of the
virgin or the Presentation of the Lord.
Decorations
On Dίa de la Candelaria people dress up dolls of the Christ Child and take it to the
church to be blessed.
Candles are also brought to the church to be blessed.
Clothing
The Christ Child is dressed up in fine clothing and brought the church with its
chosen Godparents. Traditional and native Mexican clothing styles may be seen.

Tamale Filling:
1 1/4 pounds pork loin
1 large onion, halved
1 clove garlic
4 dried California chile pods
2 cups water
1 1/2 teaspoons salt
Tamale Dough:
2 cups masa harina
1 (10.5 ounce) can beef broth
1 teaspoon baking powder
1 cup sour cream
