The farmer cannot be subsidising the urban poor. We have to move away from this ability of ours to restrain food movement, whether it is imports, exports or movement within the country as it depreciates value and opportunity to all stake holders, making availability inconsistent to the consumers. The challenge and the opportunity also is to build large scale processing and distribution capacity in the country This would further augment Indian produce to be branded nationally and internationally.

1. Crispy Rice Bhel
Amira Foods is of the largest privately owned Rice Company from India.Under the direction of Managing

Method:
• Boil Indigo Basmati Rice in plenty of water with salt and cool it.
• Dust rice with corn flour so that it gets coated evenly with cornstarch.
• Deep fry the dusted rice in medium hot oil till it becomes crisp.
• Take out the crispy rice in a mixing bowl and add aloo bhujia, fried chana dal and roasted peanuts
to it and mix well.
• Now add chopped coriander leaves, onions, ginger and green chillies along with saunth and mint
chutneys and black salt.
• Mix well and serve.
