The document evaluates the antimicrobial activity of Citrex, an organic acid complex, compared to a chlorine solution for disinfecting raw shrimp. Microbial testing was conducted on shrimp samples after treatment with 400 ppm Citrex or 200 ppm chlorine solution. The results showed that Citrex was more effective at reducing the counts of total mesophilic microflora, coliforms, E. coli, Salmonella spp., and Vibrio spp. compared to the chlorine solution. The conclusion is that chlorine solutions had a lower disinfectant performance, and more research is still needed to further support the antimicrobial effects of organic acid complexes like Citrex.
