INTRODUCTION
Polyphenols comprise a large family of compounds that have multiple structural unites of phenol.
These compounds are found in vegetables and fruits, wine, tea, extra virgin olive oil and cocoa, and
exhibit strong antioxidant activity by scavenging different families of Reactive Oxygen Species
(ROS)1. The main phenolic compounds identified in olive oils include hydroxytyrosol (HT), tyrosol
(TY), secoiridioxide and ligands3, 4.
Hydroxytyrosol, 2 (3,4 dihydroxyphenoyl) ethanol, a simple phenol found predominantly in olive tree
(Olea europaea), is one of the most effective member of the polyphenol family1,2, because of its
marked antioxidant activity, its capacity to impede low density (LDL) oxidation, platelet aggregation
and endothelial cell activation and it protection against DNA damage3,4,5. Hydroxytyrosol has been
proven to be a potent scavenger of superoxide anion and hydroxy radical6,7,8, and owing to its
antioxidant and radical scavenging properties, Hydroxytyrosol has a wide range of biological effects.

Finally, a personal struggle that happened in my life was what happened with my mother s friend, Lynzee. Lynzee had six children, four girls and two boys. She really wanted to have another addition to her family. So, when she found out that she was pregnant with a baby girl she was filled with joy. Sadly, her baby was born too early and was fighting for her survival. Her first name was Violet and her middle name was Hope. Violet fought hard and long for her life, but her body was just too weak.
