Ingredients
• 1 cup rice for risotto
• 3 tablespoonsof Parmesancheese
• ½ onion
• 1 tablespoonof butter
• 4 tablespoonsof olive oil
• 1 liter of vegetable broth
• 80 milliliters of white wine
• Salt to taste
• 1 Sicilian lemon
• Peppertotaste
• 300 gramsof shrimp

Separate the lemon, salt, pepper, oil and clean the shrimp very well, let's start preparing this Sicilian lemon
risotto forthem.
2. Reserve the lemon zest
Season the prawns by squeezing half the lemon, a drizzle of olive oil, salt and pepper.
Place a skillet over medium heat, add a tablespoon of olive oil and fry the shrimp until golden. It's super fast, 1
minute each side. Don't fry too much so it doesn't get dry. Reserve.
3. Now we are going to prepare the shrimp risotto with Sicilian lemon, separate the rest of the ingredients
In a bowl, mix the grated cheese, lemon zest and squeeze the other half of the lemon. Reserve
Place the vegetable stock in a pan and place over high heat. When it starts to boil, leave it on low heat. Also

4. Place a pan over medium heat, pour in two tablespoons of oil and sauté the onion. Add a good pinch of salt.
