Rice, these recipes are some of our
guests’ favorites!

5. RECIPE:
• 6 Blackberries
• 1 Branch of Thyme
• 3 Basil Leaves
• 1 oz. of Tequila
• 1 oz. of Triple Sec
• 1 oz. of Lemon Juice
• 1 oz. Sugar Syrup
• Ice
Instructions:
1. Crush half of the thyme branch, 2 basil leaves and 5 blackberries in
the bottom of a glass with a muddler.
2. In a shaker, add ice, liquors, lemon juice, sugar syrup and muddled
mixture. Shake vigorously!
3. Pour the drink mix from the shaker into a glass.
4. Garnish with the remaining basil leaf, thyme and blackberry (you can
also add a lime!).
5. Enjoy!

7. RECIPE:
• 1 oz. of passion fruit pulp (w/seeds)
• 8 peppermint leaves
• ½ slice of orange
• ½ oz. of rum
• ½ oz. of Triple Sec
• 4 ½ oz. of white wine
Instructions:
1. Mix all the ingredients into a shaker with some ice
2. Shake and pour into a glass for white wine!

9. RECIPE:
• 1 oz. Lime Juice
• 1 1/2 oz. of Cacique Liquor (or Sugar Cane Rum)
• Splash of Grenadine Syrup
• Splash of Blue Curacao
Instructions:
1. Add lime juice and cacique liquor to a shaker with ice
2. Shake
3. Add a splash of Grenadine Syrup to the bottom of the glass
4. Add ice
5. Slowly pour the lime and liquor mixture over ice
6. Using a spoon, pour Blue Curacao over the mixture

12. RECIPE:
• 180 grams red beans
• 2 grams thyme
• 6 grams garlic, minced
• 2 grams salt
• 100 grams coconut milk
Instructions:
1. Rinse the red beans and place into a cylindrical pot. Heat beans
while incorporating thyme, garlic, salt and oregano. Add coconut
milk, 1 gram of salt and coconut oil. Once cooked, try beans to taste.
2. In a hot open sauté pan, add small bits of garlic and thyme. Braise
until the smell is harmonized together. Add beans with liquid and the
other half of the coconut milk and sauté.
3. Add rice and peppers. Mix all ingredients together. Let stand over
low heat until ready to serve.

• 3 grams coconut oil
• 2 grams oregano
• 200 grams rice
• ½ - 1 panameño chile pepper
14. RECIPE:
• 4.5 oz. sea bass
• 1 lemon
• 2.5 Tbsp. julienne red onions
• 1 tsp. salt
• 2 Tbsp. red bell pepper
• ½ Tbsp. cilantro
Instructions:
1. Use 4.5 oz. of a sea bass steak. Cut into squares (about
a centimeter). Once minced, wash the fish with cold water and salt
to clean.
2. Cut red pepper and onion very finely.
3. In a large bowl, add ice. Place a smaller bowl over the ice.
4. In the smaller bowl, add fish, then lemon juice, salt, bell
pepper, onion and cilantro. Stir. Taste to see if balance is correct.

16. RECIPE:
• ½ C. tomato (about half of a large
tomato)
• ¼ C. onion (green or purple)
• Lime juice
• ⅛ C. cilantro
• Salt and pepper
Instructions:
1. Chop the tomato into small squares and add to a medium size bowl.
2. Finely chop the cilantro and add it to the bowl.
3. Next, chop the onion and add to the bowl.
4. Add lime juice (to taste) and mix all of the ingredients together.
5. Add salt and pepper to taste. Serve cold with tortilla chips or
plantain chips—or on the side of tacos, fish or chicken!
