Definitions and meat quality assessment

Abstract
In general quality can be defined as conformance with requirements or conformance
with users, requirements or fitness for use, at the same time, the ultimate user (customer) is
the one really determines whether the experience he or she had was good or bad, it is that
which will decide whether the product or service had quality. This principle can be applied
to all commodities including meat and meat products, the most important reason to produce
meat as suitable for human consumption should have a high quality that has the following
key ingredients:- sensory(contains color, flavor, aroma, pH), hygienic( bacterial
contamination, residues, pH), nutritional (proteins vitamins fatty acids micronutrients ),
technological( water holding capacity , water activity, pH, maturity of the tissues) and
ethical( slaughter process. Tracing and tracking, environmental aspects) quality. Each key
ingredient contains several parameters such as pH, water holding capacity, water activity,
etc. If these deferent parameters interact with each other the meat quality will be very high.
The meat quality can be determined in the three deferent groups such as determination of
raw meat quality, determination of cooked meat quality and determination of processed
meat quality. This determination will include deferent official methods such as sensory taste,
pH values, color intensity and its reflection (Gofo or Hunterlab), pigments, muscle water
holding capacity, rigor mortis values, sarcomer length, meat tenderness and chemicals and
microbial analysis. Therefore the present paper will deal with most important meat quality
definitions and with some meat key ingredients and its parameters.
