3. Introduction
Vapor pressure is a measure of the tendency
of a material to change into the gaseous
or vapor state, and it increases with
temperature.
4. History:
In the 1880s, French chemist François-Marie
Raoul discovered that when a substance
is dissolved in a solution, the vapor pressure
of the solution will generally decrease.
5. What is vapor pressure in water
The vapor pressure of a liquid is the point at
which equilibrium pressure is reached,
in a closed container, between molecules
leaving the liquid and going into the gaseous
phase and molecules leaving the gaseous phase
and entering the liquid phase.
7. Type of vapor pressure:
The two types of vaporization are evaporation and boiling.
Evaporation refers to the surface of a body of liquid
turning into gas, such as a drop of water on the concrete
turning into a gas on a hot day. Boiling refers to heating up a
liquid until it releases vapor, such as heating water on a
stove until steam forms
8. Aim of vapor and pressure:
1]Determining the steam pressure curve of water
at 200c and pressure near50bar.
2]Determine heat of vaporization of water.
12. Application:
Vapor pressure, relating to boiling point and
heat of vaporization, is the most low vapor
pressures, so important cha preparation
racteristic in the application of fats to fried
food.
