1.Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until tender yet firm to the bit, 8 to 10 minutes; drain.
2.Heat olive oil in a large skillet over medium–high heat. Add onion and garlic; saute until fragrant, about 2 minutes. Stir in the chicken and cook,
stirring occasionally, until chicken is no longer pink in the center and the juices run clear, about 5 to 6 minutes.
3.Reduce heat to medium–low; add artichoke hearts, tomato, feta cheese, parsley, lemon juice, oregano, and cooked pasta. Cook and stir until heated

For grains we have pasta, which was about 6 servings according to the Canada food guide. For Meats, we have the chicken breast, which is about 6
servings. For Dairy, the pasta had cheese, which according to the Canada food guide is 1 serving. For Vegetables we had artichokes, onions, garlic
and tomatoes, which is about 6 servings. Lastly for oils, I used olive oil which is healthier compared to other oils. In the end this looked pretty bland,
but tasted fine, plus I used whole wheat pasta, so that it would be healthier.
Roast Vegetables My side dish was roast vegetables, which contain vegetables, olive oil and some spices. The vegetables in this dish were Squash,
Sweet potatoes, potatoes, bell peppers and an onion. Altogether, this is about 8 servings of vegetables. This dish turned out fine and it follows the
Canada food guide by having a variety of colors, having fresh vegetables and not having much added salts or sugars. Also it contains sweet potatoes
and squash, which fit under orange vegetables, which are recommended to eat, at least once a day.

PUTTING IT TOGETHER:
First, with your rubber spatula, spread cream cheese over the whole flour tortilla evenly, (like you are buttering toast). Leave a little space dry around
the edges.
Second, using only the bottom half of the tortilla, place turkey slices (about 5) on bottom edge and sides. Sprinkle with shredded cheese (like you are
making a pizza), olives, artichoke hearts, and spinach leaf.
Next, start rolling the flour tortilla away from you (sort of like a burrito, but don't tuck the sides in). Try to wrap it tight. Here is a photo of what it

After you are finished rolling, wrap the aram in foil and place in refrigerator for 1–2 hours to set.
Lastly, cut into 1 inch pieces and place all around serving tray, stacking them. You can get creative with your creation. *NOTE:

I have a lot of good memories of my senior prom. The Hilton's California ballroom, the dancing, and socializing with friends were some of the
memories. But most of all, the food was the best memory of all. The food served at Castlemont High's senior prom was colorful and delicious. One
could not help but to see, smell, and eventually consume the food. The meal consisted of hors d'oeurves, the main course, beverages, and dessert. All
of these delicacies combined made the prom a satisfying experience.
I remember vividly the set of hors d'oeurves. The hors d'oeurves were arranged in a big heart to set the mood of mystery and romance. The bright
crimson bell pepper stood mighty in the face of its relative, the humble, dull, green pepper. The darkened pieces of beef had visible hints of all purpose
seasoning and slivers of onions. The dull pink jumbo shrimp looked like crescent moons, outrageously swollen, and just about ready to bust out of their
transparent, segmented shells.
The smell of hors d'oeurves served to whet the appetite of all in attendance. The hickory smell of beef stood out to draw everyone near. The shrimp
had a salty smell with a hint of ocean water. The bell peppers, both green and red, had a tart smell, compared to their fleshy counterparts. My taste buds

tutoring and study materials to adults who reside in Wayne and Pike counties since 1987." ("The News Eagle." June 9, 2016.) Congratulations Carol!
Thanks to Carol Rick and Bonnie Christiansen, we have had two very interesting and successful bus trips this year. The first in May was to the
Sculpture Gardens in New Jersey.
Our second trip was last week to the Meadowburn Farms in Vernon, New Jersey. The dahlias were in full bloom and were gorgeous. The grounds are
in the process of being refurbished while maintaining their historical significance. We were fortunate to see these gardens as they are only open one
Saturday a month during the summer season. After the tour we had a 6–course meal nearby at the Milano Restaurant in Hardyston, NJ. Great good and
atmosphere!
Thank you to Judi Mortensen for planning the car trip to see Michael Le Vine's gardens in Hawley. Michael is a very creative landscape designer. He
designed the gardens around the Visitor Center on Rt. 6. The Club has been invited back next year to see his gardens and the new pond he is currently
building.
