oxidation values exceeding 0.5 mg MDA/kg. Saturated and monounsaturated fatty acids content were lower in HPP treatment of almost all cuts (except

organelles have their own specific functions; they interact with each other and the membrane to work as a unit.
The membrane therefore has several functions, which can be attributed by its molecular composition and structure.
