2. Introduction
Petaling street is known to be Malaysia’s very own China Town
and is filled with delightful array of local cuisines. Then, there
are also Chinese seafood restaurants that can be found at
every corner, and stalls selling all kinds of snacks are stretched
along the street, resulting in an interesting mixture of aroma
filling the air that makes an individual hard to resist. With all
these delicious food made it is very important to know how the
food is prepared as this may affect people’s decisions of the
space and its cleanliness.
7. Objectives
1. To understand the behavioral pattern of people
towards outdoor and indoor food preparation in relation to
cleanliness of the space.
2. To investigate and study which food preparation space is best
for a restaurant.
3. To find out what are the ways to improve the quality of food
preparation spaces, whether is outdoor or indoor so that
cleanliness would not be an issue in the future.
8. Original - Kim Lian Kee Hokkien Mee Shop
This shop was
founded in the year
1927 and is the place
where the delicious
Hokkein mee
originated. Located
at a corner lot of
main junction of
Petaling street, it is
until today one of
the best places to
have this Hokkien
mee .
9. Food served
The Hokkein mee is a
unique black-coloured
charcoal-fried yellow
noodle. A tasty broth is
added gradually
during the frying
process, to be slowly
absorbed by the
noodles into a thick
rich texture.

has an outdoor kitchen
concept, where food can
be seen being prepared
by the cooks. The good
smell of the food may be
appealing and tasty but
the cleanliness or
condition of the kitchen
is rundown. Therefore,
this may affect the

11. New - Kim Lian Kee Hokkien Mee Shop
Some many years
later, the Kim Lian
Kee Hokkein Mee
shop opened their
very own
restaurant just
opposite of their
original shop. The
restaurant could
accompany more
people and also
served a variation
of different dishes.

The restaurant kept their original
dish and at the same time added
many more dishes to their menu
such as ginger onion egg noodles,
Cantonese fried noodles and many
more.

restaurant has an indoor
kitchen whereby it is kept
away from the customers
view. Hence, customers
will never know whether
the food is prepared
hygienically or not. But
most people assume
indoor food prep is more
cleaner than others
because it it is not exposed
to the unwanted elements
outside.
14. Madras Lane Stalls
Set within
Chinatown,
Madras Lane is a
narrow alleyway
that’s
connected to the
Petaling Street
Flea Market.
Madras Lane is
known for its tasty
hawker fare as it is
famous for its
curry mee and
asam laksa.
15. Food served
The famous Curry
laksa is is a mix of
noodles, long
beans, deep-fried
tofu and pork rind,
served in a spicy
broth that’s made
with coconut milk
and curry. Wheres,
the Asam laksa is a
mix of Nyonya
noodles with fish
and a spicy soup.

The food prepared at
the Madras lane are in
the the form of
hawker stalls. Hence,
its is prepared in an
outdoor kitchen
concept. The open
prep stalls attract
customers as its
setting is well
mannered and
properly maintained.
