Recipe for pita pocket bread

* if you can find them, get whole wheat
pita pockets (sometimes they aren’t cut
and sliced; in that case, I just spread
the humus mixture like a peanut butter
sandwich, then toss the veggie mix on
top of it : kind of messy, still delicious!)

* tip : if you want to save the ingredients to
make more, later, don’t do this and the
following steps until you’re ready to eat;
otherwise, it will get soggy and yucky after

the hummus, then, add the feta cheese
(coming next) on top of everything

* hummus is just chickpeas with some
tahini, olive oil, lemon juice, salt and
garlic, and it is delicious, of course!
* the hummus comes in a variety of
flavors, some spicier and more tangy
than others
* the feta cheese adds a really nice tangy
flavor, and makes it just this side of
decadent!
* it is sometimes hard to find, but reduced
fat feta is available

14. * sprinkle in the feta cheese
* how much? that depends on you. i’ve put
a bit much in here, to be sure it showed
up, bet these tasted extra delicious!

15. * tip : I usually take the entire container
of feta cheese (which is rather chunky)
and chop it into smaller bits with my
blender’s min-chopper
* and, when I get it from the fridge to use
it, I give the container a good shaking
to break the bits apart, so that I can add
smaller amounts, as will sift out more
easily

* these almonds are readily available in
the nuts aisle in the grocery store
* you could get the non-bold flavors, but,
don’t be a fool!
* and, if you didn’t know it, almonds are
a super-food, not only super-tasty but

container of almonds just for use in this
recipe, it’ll keep a long time

have to try it a few times to know how
much is the right amount, but, you
probably couldn’t put in too much!

up, is about the right amount, now...

* again, the amount depends on taste;
if you’ve not had hummus before,
probably wanna’ start with less
