 Preparation
Season the medium large boneless chickens with Salt and pepper. Prepare the oil be heating it
over a heavy bottom oven over medium-high heat. Cook the chicken in the oven until it turns
light brown at the sides, remove and place in a pan. Add the sausage to the chicken and cook
again until they turn brown and remove.
Sprinkle the multi-purpose flour over the oil, and add 2 teaspoon of margarine, cook over
medium heat while stirring continuously, this should take about 10 minutes – remove and let the
roux cool down.
Take the Dutch over back to low heat and melt the 3 teaspoon of margarine, add the green
pepper, onion, celery and Garlic and cook the mixture for about 10 minutes. Add other
ingredients such as the Worcestershire sauce, pepper, salt, and ¼ bunch parsley to enhance the
taste- cook and stir this mixture for about 10 minutes. Add the 3 cups of water, the bouillon
cubes, and whisk continuously before adding the chicken and sausage. Heat the whole content
until boiling and reduce the heat afterwards, cover the content and let it simmer for about 50
minutes. Add the tomatoes and Okra, cover and let it simmer for about 1 hour. Add the green
onions, shrimps, and chopped parsley just before serving.
