CH3
 Hydrocarbon side chain is saturated (no
double bonds).
 They have the general formula
CH3-(CH2)n-COOH
 They are named by adding suffix ‘anoic' after the
hydrocarbon.
CH3
 Acetic acid Ethanoic acid 2 : 0 CH3COOH
 Propionic acid n-Propanoic acid 3 : 0 CH3CH2COOH
 Butyric acid n-Butanoic acid 4 : 0 CH3 (CH2)2COOH
 Valeric acid n-Pentanoic acid 5 : 0 CH3 (CH2)3COOH
 Caproic acid n-Hexanoic acid 6 : 0 CH3 (CH2)4COOH
 Caprylic acid n-Octanoic acid 8 : 0 CH3 (CH2)6COOH
 Capric acid n-Decanoic acid 10 : 0 CH3 (CH2)8COOH
 Lauric acid n-Dodecanoic acid 12 : 0 CH3 (CH2)10COOH
 Myristic acid n-Tetradecanoic acid 14 : 0 CH3 (CH2)12COOH
 Palmitic acid n-Hexadecanoic acid 16 : 0 CH3 (CH2)14COOH
 Stearic acid n-Octadecanoic acid 18 : 0 CH3 (CH2)16COOH
 Arachidic acid n-Eicosanoic acid 20 : 0 CH3 (CH2)18COOH
 Behenic acid n-Docosanoic acid 22 : 0 CH3 (CH2)20COOH
 Lignoceric acid n-Tetracosanoic acid 24 : 0 CH3 (CH2)22COOH
CH3
 The 2C (acetic acid) and 4C (butyric acid) are
important metabolic intermediates.
 The C16 (palmitic acid) and C18 (stearic acid) are
most abundant in body fat.
 Each animal species will have characteristic pattern of
fatty acid composition.
 Thus, human body fat contains…
 50% oleic acid,
 25% palmitic acid,
 10% linoleic and
 5% stearic acid.
CH3
Numbering of carbon atoms
 Fatty acid carbon atoms are numbered starting at the
carboxyl terminus.
 Carbon atoms 2 and 3 are often referred to as α and
β respectively.
 The methyl carbon atom at the distal end of the
chain is called omega (ω) carbon.

Carry even number of carbons
Most of the FA that occur in natural lipids are even
carbons.
CH3
Propionic acid
• 3 Carbon
Valeric acid
• 5 Carbon
 Carry odd number of carbons
 Seen in milk and microbial cell walls
CH3
CH3
 Contains double bonds (unsaturated).
 May contain one or more double bonds.
 Named by adding suffix ‘enoic' after the hydrocarbon.
Subclassified according to number of double bonds

factors for chronic diseases, including…
composition
of blood lipids &
lipoproteins
Systemic

Arachidonic acid becomes essential, If its precursor linoleic acid is not provided in the
diet in sufficient amounts.
The fatty acids
that cannot be
synthesized by the
body & therefore,
should be supplied
in the diet are
known as essential
fatty acids (EFA).
Chemically, they
are
polyunsaturated
fatty acids,
namely…
• linoleic acid (18 : 2; 9,
12)
• linolenic acid
(18:3;9,12,15)
• Arachidonic acid
(20:4;5,8,11,14)
CH3
Biochemical basis for essentiality:
 Linoleic acid and linolenic acid are essential since humans
lack the enzymes that can introduce double bonds beyond
carbons 9 to 10.
Deficiency of EFA :
 The deficiency of EFA results in phrynoderma or toad
skin, characterized by the presence of horny eruptions on
the posterior and lateral parts of limbs, on the back and
buttocks, loss of hair and poor wound healing.
CH3
Phrynoderma Or Toad Skin Toad-skinned Frog
CH3
Functions of EFA
1.Synthesis of Ecosanoids
2.Maintenance of structural integrity of
cells
3.Development of retina and brain
4.Antiatherogenic effect
CH3
Hydroxy fatty acids:
 Some of the fatty acids are hydroxylated. 􀁅-Hydroxybutyric
acid, one of the ketone bodies produced in metabolism, is
a simple example of hydroxy fatty acids.
Cyclic fatty acids:
 Fatty acids with cyclic structures are rather rare e.g.,
chaulmoogric acid found in chaulmoogra oil (used in
leprosy treatment) contains cyclopentenyl ring.

  • 9. CH3 Numbering of carbon atoms  Fatty acid carbon atoms are numbered starting at the carboxyl terminus.  Carbon atoms 2 and 3 are often referred to as α and β respectively.  The methyl carbon atom at the distal end of the chain is called omega (ω) carbon.
  • 10. CH3 Numbering of carbon atoms CH3-CH2-CH2-CH2-CH2-CH2-COOH ω1 ω2 ω3 ω4 1234567 αβγδω
  • 11. CH3
  • 12. CH3 Carry even number of carbons Most of the FA that occur in natural lipids are even carbons.
  • 13. CH3 Propionic acid • 3 Carbon Valeric acid • 5 Carbon  Carry odd number of carbons  Seen in milk and microbial cell walls
  • 14. CH3
  • 15. CH3  Contains double bonds (unsaturated).  May contain one or more double bonds.  Named by adding suffix ‘enoic' after the hydrocarbon. Subclassified according to number of double bonds

  • 24. CH3 Arachidonic acid becomes essential, If its precursor linoleic acid is not provided in the diet in sufficient amounts. The fatty acids that cannot be synthesized by the body & therefore, should be supplied in the diet are known as essential fatty acids (EFA). Chemically, they are polyunsaturated fatty acids, namely… • linoleic acid (18 : 2; 9, 12) • linolenic acid (18:3;9,12,15) • Arachidonic acid (20:4;5,8,11,14)
  • 25. CH3 Biochemical basis for essentiality:  Linoleic acid and linolenic acid are essential since humans lack the enzymes that can introduce double bonds beyond carbons 9 to 10. Deficiency of EFA :  The deficiency of EFA results in phrynoderma or toad skin, characterized by the presence of horny eruptions on the posterior and lateral parts of limbs, on the back and buttocks, loss of hair and poor wound healing.
  • 26. CH3 Phrynoderma Or Toad Skin Toad-skinned Frog
  • 27. CH3 Functions of EFA 1.Synthesis of Ecosanoids 2.Maintenance of structural integrity of cells 3.Development of retina and brain 4.Antiatherogenic effect
  • 28. CH3 Hydroxy fatty acids:  Some of the fatty acids are hydroxylated. 􀁅-Hydroxybutyric acid, one of the ketone bodies produced in metabolism, is a simple example of hydroxy fatty acids. Cyclic fatty acids:  Fatty acids with cyclic structures are rather rare e.g., chaulmoogric acid found in chaulmoogra oil (used in leprosy treatment) contains cyclopentenyl ring.
