• The construction and maintenance of rooms and
equipment to ensure a business operates hygienically.
• The identification of food safety procedures and the
implementation of a HACCP Based Food Safety
Management System
• The training of food handlers, including relevant HACCP
training
• The obligations placed on food handlers and food
business operators
Offences may be reported to the Procurator Fiscal by Enforcement Officers

The Food Hygiene (Scotland) Regulations 2006
Temperature controls:
• Food to be kept in a refrigerator or in a cool ventilated place
OR above 63⁰C
• The temperature of reheated food to be raised to at least 82⁰C
• No food to be kept at temperatures which could result in a
risk to health
