5. The Food Hygiene (Scotland)
Regulations 2006
• Temperature controls:
o Food to be kept in a refrigerator or in a cool ventilated
place OR above 63⁰C
o The temperature of reheated food to be raised to at
least 82⁰C
o No food to be kept at temperatures which could result
in a risk to health
• The role of authorised enforcement officers and food
authorities
