DAY TWENTY–NINE
A new Whole30 challenge for me: Dinner Party. Thank goodness it's only one couple, but when
you're on an extreme diet and have company for dinner, you don't want them to feel like they're on a
diet too. This menu made sure they didn't leave the table unsatisfied.
Typical me, I got so wrapped up in the moment I forgot to take photos with the exception of one
dish. Sad moment, because the food was really good!
SEARED SCALLOPS WITH CHORIZO OVER ROASTED CORN AND RED PEPPER
This was SO delicious. I will definitely be making it again, so I can taste the corn too!
Serves 4
Ingredients:
8 large sea scallops
1/2 teaspoon paprika
1/2 teaspoon cumin
2 hot chorizo sausages, sliced

In a small skillet, cook the remaining corn with the red pepper over medium heat until the pepper is
soft and fragrant, about 10 minutes. Just before serving, add the cilantro and blended corn and mayo
mixture, heat through and stir to combine.
Slice the chorizo into slices and sear in a not skillet until almost crisp on both sides, set aside on a
paper towel–lined plate.
In a small bowl add the paprika, cumin, salt and freshly ground black pepper to taste, stir to
combine. Dip each scallop into the spice mixture, coating the surface before searing the scallops in a
skillet over high heat about 1 minute on each side (depending upon the size of the scallop)
To serve, use a long rectangular plate, drag the corn mixture across the plate in a thick line and top
with a row of the seared scallops alternating with slices of chorizo.

going out to eat can be difficult with the prices. Although the items don't cost too much, they can

can sometimes make it hard to find something to eat if you are a picky eater. The seating in the
restaurant is made up of picnic tables and window seats. These options can sometimes make it hard
to find a place to sit, especially if you have a big group of people with you or go during their busy

"Wake up, put shoes on and come downstairs to eat," my grandmother says as she's opening the
curtains in my room. As she walks out the room, she turns around and says "Do you want tortillas
with your chorizo and frijoles so I can heat a couple up." Even though she leaves the room without
my answer, in her head, already knowing my answer.
I put on a pair of jeans and walk downstairs into the dining room, there was a plate with frijoles,
chorizo and tortillas waiting for me. My grandmother brings me my favorite drink, homemade
chocolate milk. I sit down and across from me is my cousin Lesly. She was bored, she always was.
"Do you want to go to the park? The sun is shining and there's a cool breeze out," my cousin says as
she puts on her shoes.
"Yes," I say. "It sounds fun. I quickly go upstairs to put on shorts.
I come back downstairs and we both head out the door. The park is just around the corner of our
house so it's only a five minute walk.
While we were walking, my cousin turns to me and says, "Hey I have ten pesos so after we're done
playing we can go to the mini store and buy ourselves ice cream?"
"Yes," I say in an excited tone.

The first thing I tried was a chimichanga. I tasted the crunchiness of the fried tortilla and juicy
tenderness of the meat. I could taste the cilantro and chiles of the salsa and the way it made my
