Haggis is a traditional Scottish dish often served on Burns Night, which celebrates the life of poet Robert Burns. It consists of sheep organs (heart, liver, lungs) minced with oatmeal, onion, suet, and seasonings that are encased in the sheep's stomach and boiled for 3 hours. The haggis is then sliced and served with mashed potatoes and turnips.
