Food business industry has experienced a lot of changes in the advancement of technologies. And one of the technology that came with this is cloud kitchen. According to the resources cloud kitchen is one of the fastest growing food franchise business and is regarded as the more intelligent restaurant operation method.

NYC PIE is a gourmet pizzeria specializing in New York style thin crust pizzas.
The brand is the brainchild of Raj Rao, an ex-Four Seasons, Ritz Carlton F&B veteran of 30 years and Sukriti Singh Rao. They knew that pizza as a category is loved by most people and so they started their very own pizza brand in August 2014.

We had a chance to chat with Sukriti Rao for this edition of Straight Outta Kitchen.
So we analyzed EVERY restaurant name rated above 4 (as a general indication of customer love) on India’s most popular restaurant discovery app. That’s more than 3500 restaurants.
The Licensing Act 2003 states that one needs a permit to sell alcohol in India. Even if you want to give away alcohol for free, you’re required to have this permit. This is because the mere act of giving alcohol away for free is seen as an incentive offered to your customers to purchase from you- one that is a part of your pricing structure.
Restaurant liquor in a pub, a bar, a hotel and so on is legal only and only if the seller holds a valid liquor permit, also called a liquor permit. The agency in charge of approving this license is different in each state across India but it is heavily regulated by the government. Furthermore, cities can also have certain restrictions that are particular only to them. Each state has its own set of rules for restaurant liquor, alcohol consumption and age restrictions. Also, the government forbids home delivery of alcohol. It can solely be bought physically from a licensed shop.
A liquor permit for a restaurant is completely different from the liquor permit acquired by wholesale shops. It accounts for different aspects of sale and distribution, types of alcohol being sold, pricing and so on.
An L1 license, for instance, is granted to companies that run a licensed manufacturing unit. On the other hand, an L6 license would be granted to bottling plants or working distilleries. A P-13 license would be granted to licensed hotels and restaurants to serve alcohol on and off their premises on one specific day for a particular function.

demographics of residents, popular cuisines and hyperlocal demand-supply. The idea
here is to address the demand for the most ordered cuisine (Biriyani, North-Indian,
Chinese, Burgers, Pizza & Pasta – that’s really it in India) in a neighbourhood (a 5-6 km
radius) with relatively lesser restaurant options that serve these dishes. This model is
clever because it positions the separate brands as their own individual establishments.
And having a single shared kitchen keeps operational costs low. This model closely
resembles the original cloud kitchen model with no physical storefront. You could think
of it as specialized cuisine based cloud restaurants, owned by the same mother brand,
sharing the same kitchen.

an optimally located empty kitchen space with the bare minimum infrastructure – gas
pipelines, drainage and ventilation systems. Established (or new) restaurant businesses
rent that kitchen space, make use of Swiggy’s online ordering, delivery fleet and menu
intelligence to set-up a restaurant. The restaurant brings the equipment, staff, raw
materials and recipes. In simple, the restaurant does the cooking and Swiggy does the
rest.

where customers can walk in. A mash-up between a cloud kitchen and takeaway
restaurant, similar to the Freshmenu example. Powered by Zomato’s insights.

Things to look out for as you plan your cloud kitchen business model
The wrong side of third-party discounts – Orders spiked by third-party
discounts leads to buying more equipment and hiring more people. When the
discount stops, the orders stop and you’re left with higher costs.
Food cost management – Not keeping an eye on inventory management i.e the
actual cost of the ingredients that go into a dish can prove insurmountable. While
the rent, cost of overheads and peak order periods are not in your control, food
cost is. As a standard, your food costs should range between 30-33%. But food cost
is tough to control. More often than not, the kitchen staff is relaxed about exact
measurements. Using an inventory management tool integrated with your
restaurant POS can certainly help.
Food Safety – The Food Safety and Standards Association on India (FSSAI) has
been quite visible in the news ordering aggregators to de-list restaurants and
taking other measures to ensure a high standard of food safety. And cloud kitchens
also have to play by the same rules. Whilst older restaurant businesses have some
experience in training staff, Cloud Kitchens have to ramp up.
