3. 1. 2 cups onions, chopped.
2. ¼-cup ginger minced or paste.
3. 1 ¼-garlic clove, minced.
4. 6 to 7 cups of vegetable stock finely chopped.
5. 5 cups of pumpkin purees

7. ½ tsp fresh thyme,
chopped.

chopped.
7. 1 tbsp olive oil

5. 1. Take a large pan and heat it.
2. Add olive oil to the pan.
3. Now add finely chopped onions to the bowl and
cook it until it becomes transparent.
4. After the onions become transparent, add ginger
and garlic to it.

6. 5. Cook for 1 minute.
6. Now add 1 cup of vegetable stock to the above and
cook for 6 minutes.
7. When the vegetables have become tender, add pumpkin
to it.
8. Again cook for 1 minute and then add the remaining
vegetable stock to it.
9. Add salt as per your taste.

7. 10. Now cook the above mixture for about half an hour.
11. Blend the soup by hand blender until it become smooth.
12. Remove the soup from the heat.
13. Garnish with parsley and serve hot.

fighting inflammation in arthritis.
 Garlic in the dish contains vitamin B-6, vitamin c,
selenium, manganese and fibre.

9.  Pumpkin, ginger and garlic are known for their role as
arthritis fighting food due to the presence of beta-
carotene in them.
 Beta cryptoxanthin in pumpkin helps reduce the pain
in arthritis.
