This document presents the thesis defense of Group 3 on the operational challenges and coping strategies of samgyeopsal businesses in Kalibo, Aklan during the COVID-19 pandemic. It identifies the research problem, objectives, questions, methodology, findings and conclusions. The study found that samgyeopsal businesses faced major changes to operations, products/services and suppliers due to pandemic restrictions. They coped through strategies like delivery services and social media marketing. The researchers concluded that government restrictions impacted employment and operations, while social media helped promote businesses. Recommendations included continued use of social media and delivery services, as well as innovative offerings and seating arrangements.

3. STATEMENT OF THE PROBLEM
The Samgyeopsal businesses in Kalibo, Aklan,
encountered various hurdles as a result of the COVID-19
pandemic, making it difficult to manage business
operations and stay afloat in the food industry. The
majority of samgyeopsal businesses devised coping
measures to avoid business closure. The research
identified the operational challenges and coping
strategies of the samgyeopsal businesses in Kalibo,
Aklan.

7. RESEARCH METHODOLOGY
This chapter explains various methodologies
used in the data gathering and analysis of the
research methods and procedures adhered to by
the researchers in order to answer systematically
the specific problems posed for investigation.

The study used a quantitative type of study
which according to Bhandari (2021), is the
process of collecting and analyzing numerical
data.
The researchers used survey research to
gather information in order to easily describe a
broad sample of people who are interested in

The participants in this study were the registered
samgyeopsal businesses located in Kalibo, Aklan,
which were operational despite the changes in their
operations brought by the COVID-19 pandemic.

the Complete Enumeration Survey Method. According
to the Australian Bureau of Statistics, The Complete
Enumeration was a statistical investigation in which
data was collected for every element or unit of the
population.

14. FINDINGS
This study showed that 100% of the respondents
experienced major changes in their daily operations and
to their products/services as a result of the COVID-19
pandemic. As safety precautions created impact to the
samgyeopsal businesses, 75% of the respondents
experienced changes in sources (suppliers) of raw
materials while the remaining 25% does not experienced
it at all.
The following are the findings of the study:

The study showed that government restrictions had a
huge impact on the samgyeopsal businesses that is why
75% of the businesses considered layoffs while 25% of
the businesses doesn’t experienced layoffs. As the
COVID-19 pandemic spread, the study showed that 75%
of the businesses experienced difficulty in their services.
On the contrary, 25% of the businesses don’t experience
any difficulty when it comes to their services.
The following are the findings of the study:

However, the study also showed that the
samgyeopsal businesses used social media platforms
to broaden their customer reach and wrote a business
continuity plan following the COVID-19 outbreak. As
for other strategy used, 75% of the businesses
considered delivery services while the remaining 25%
doesn’t rendered delivery services.
The following are the findings of the study:

not just in their daily operations but also in their products, services as
well as their supplier of raw materials as a result of COVID-19
pandemic. It directly affects employment and most of all operation of
restaurant firms so businesses do what they can do in order to stay
afloat in the food industry.
Based on the findings of the study, the following conclusions
are made:

had an impact on the samgyeopsal businesses, as some
of them considered layoffs and faced difficulties in their
services. Policies implemented by the government made
samgyeopsal businesses to minimize their customer for
dine-in and offers delivery services for those who can’t eat
at their restaurants.
Based on the findings of the study, the following
conclusions are made:

19. The researchers conclude that a social media platform plays a big
part on samgyeopsal businesses in Kalibo, Aklan. The study shows
that social media helps the samgyeopsal businesses to promote and
helps to increase awareness about their restaurants (e.g. combos to
offer and promos) which result to buying decision of their customers.
Based on the findings of the study, the following conclusions

customer reach. ·The employees should have a
proper orientation and trainings on how to treat
customer nicely especially in online interaction
wherein customers can misinterpret employees’
behavior if they are being careless in their

consider the delivery services for their daily
operations that can help them to improve their
service since samgyeopsal restaurants had
undergo significant and permanent changes
in the way they operate because of COVID-19.

up an expand delivery and takeout
options. Even in places where local
shelter-in-place orders haven’t closed in-
store dining, restaurants are still seeing
reduced traffic.

should think outside of the box. For example, they
should begin selling bundles of vegetables. Others
have re-worked their menus to focus on more cost-
efficient offerings, such as family-style meals or cook-

impact of COVID-19 Pandemic, many people are now
able to dine-in without considering the 50% seat
capacity that is part of safety measures, hence,
samgyeopsal restaurants must have put some
designated area for families who wants to dine-in and
another area for those who come solo or with partner
and each of area has different ambiance to make the
customer's feel important and wanted. Family
designated area should be less than the capacity of
solo/partner designated area to avoid stagnant.
