Millets are a group of highly variable small-seeded grasses, widely grown around the world as cereal crops or grains for human food and as fodder.
Two major millet crops currently growing in India are
Bajra (pearl millet)
Jowar (sorghum),
Other indigenous varieties of “small millets” like
Ragi (Finger millet).
Sanwa (Barnyard Millet)
Proso millet ( Cheena)
Kangni (Foxtail Millet)
why to grow millets
Low input cost: These are good for the soil, have shorter cultivation cycles and require less cost-intensive cultivation.
Climate resilience: These unique features make millets suited for and resilient to India’s varied agro-climatic conditions.
Drought tolerance: Millets are not water or input-intensive, making them a sustainable strategy for addressing climate change and building resilient agri-food systems.
The following attributes are aptly applied to millets.
a. Good for the consumer: they can help overcome some of the biggest
nutritional and health problems (iron, zinc, folic acid, calcium, diabetes);
b. Good for the planet: they have a low water footprint, are able to survive
in the hottest driest climates and will be important in coping with climate change)
c. Good for the farmer: can increase yields up to 3 fold, have multiple uses
(food, fodder, fuel), and are typically the last crop standing in times of drought being a good risk management strategy for farmers.

Effects of Cinnamon Powder on Egg Quality: A New Approach using Layer BirdsAI Publications
Attention towards natural growth promoters in poultry has been on the increase in different parts of the world. However, most studies focus on broiler birds and quail. This study analyzed how cinnamon powder supplemented in the diet of Lohmann Brown layer birds can improve egg quality. This study consisted of 5 treatments of 30 birds per treatment, comprising fifteen replicates of 2 birds per replicates. The treatments included: T1: Control without Cinnamon; T2: 4 litres of water + 0.1g of cinnamon; T3: 4 litres of water + 0.2g of cinnamon; T4: 4 litres of water + 0.3g of cinnamon; T5: 4 litres of water + 0.4g of cinnamon. Parameters measured were egg weight, egg mass, egg breadth, egg length, albumen height, albumen weight, yolk height, yolk length, yolk colour, yolk weight, shell weight, and shell thickness. The results revealed an increase in the albumen weight, yolk weight, albumen height, and yolk height as the inclusion levels of cinnamon powder increase. In addition, the egg weight was highest in treatment 5. Taken together, cinnamon powder addition in the diet of Lohmann Brown layer birds has a positive outcome on egg quality.

Analysis was carried out on the sensory, mineral, functional, and proximate properties of maize semolina fortified with bambara groundnut flour using different formulations. The sensory evaluation of maize semolina fortified with bambara nut flours was carried out using the different formulations. Sample MWB which is sample produced between 40% maize, 40% wheat and 20% bambara nut flours. It had 7.60% color, 7.90% flavor, 6.90% taste, 8.50% texture, and 9.00% acceptability, respectively. The calcium, magnesium, iron, zinc, and phosphorus contents were 92.59 mg/kg, 179.46 mg/kg, 300.58 mg/kg, 16.35 mg/kg, and 6.80 mg/kg, respectively. For the functional properties, the oil absorption capacity (g/g) was 6.0, water absorption capacity (g/g) was 7.80, emulsion capacity was 54.00%, gelation capacity was 22.60%, foam capacity was 48.30%, and bulk density was 0.78 g/ml. The moisture content, ash content, crude fat, crude fiber, and the crude protein composition were 12.29%, 1.60%, 5.60%, 3.80%, 17.38%, and 59.33% carbohydrate, respectively. The results showed that the nutritive value of bambara nut flour incorporated into maize semolina flour can be used to supply protein to the human diet.

Abstract
Aim: To formulate ready-to-make millet mix Idli and Dosa, and to compare the chemical and sensory qualities of
those with pure rice mix Idli and Dosa.
Methods: Germinated powders of high-quality millets were mixed and incorporated with other basic traditional
ingredients like rice powder and de-husked black gram powder in formulated proportions. Nutritional and sensory
qualities were assessed after fermentation and cooking of the mix to make Idli and Dosa.
Results: The millet-based Idli contained high proportions of protein (15–18%), fat (5.0–6.2%) and carbohydrate
(72–74%) compared to the rice-based Idli. The ash content was in the range of 1–2% and crude fibre (3.0–4.9%). The
millet-based Dosa contained high proportions of protein (15–18%), fat (8.5–9.8%) and carbohydrate (69–72%)
compared to the rice-based Dosa. Also the processing steps like decortications, germination and fermentation
significantly reduced the phytic acids (69%) and tannin (78%) content in millet-based foods. The sensory evaluation
results showed that the overall acceptability of millet based product is ‘Like moderately’ with score of 7.7 0.5
Conclusion: The results indicated that the nutritional content of millet-incorporated Idli and Dosa was comparable
with the standard recommended dietary values, and the processing techniques not only decrease the antinutrients
but also enhance the essential nutrients. Emerging research on millet-based food is one of the strategies for
alleviating malnutrition.

2. Small millets have been traditionally the
indispensable component of dryland
farming system.
Six small millets :
finger millet (Eleusine coracana),
foxtail millet (Setaria italica),
kodo-millet (Paspalum scrobiculatum),
proso millet (Panicum millaceum)
barnyard millet (Echinochloa frumentacea)
little millet (Panicum sumatrnse)
Finger millet and foxtail millet are
grown in the north eastern region.
3. Finger Millet
Finger millet (ragi) is the most
important of the small millets in
India.
It is a short duration crop
usually grown under rainfed
condition
Area under finger millet
cultivation in the north
eastern region was 43,800 ha
(2004) with production and
productivity of 32, 300 t and
737 kg/ha respectively
4. Finger millet is nutritionally superior to
rice and wheat and it provides a cheap
source of proteins, minerals and vitamins
to the rural tribal population.
Finger millet malt has shown many uses in
health food formulations besides infant food.
It is also grinded into flour which is used for
making chapatis.
According to an estimate hill farmers
consume 80% millets, 10% other food
grains, 7% vegetables and pulses.
5. Varietal Improvement
Twenty three (23) varietal trials were conducted in 23 locations
with nine varieties.
Muskey 5 (local variety) exhibited the mean highest yield
over all the locations.
The maximum yield of
Muskey 5 in Meghalaya was
19.44q/ha and in Sikkim it
yielded 18.46q/ha.
7. Foxtail Millet
Foxtail millet is grown in different parts
of India, China, Japan, South and east
Europe and North America.
Foxtail millet is the food of the tribal
people in most of the regions because of
its high nutritive value.
From the six varietal verification
trials conducted in Meghalaya and
Nagaland with 6 entries (SR11,
SR16, PRK 1, SIA 325, PS 4 and
KDR), PRK 1 yielded the best with
917kg/ha.
