DJ BBQ SAYS…
“If you like your meat freakin’ fast and so
delicious you start to wonder if you’ve died and
woken up on Planet DamnThat’sTasty, I’m about
to blow your mind. You’re gonna want to throw
down my unbelievable pig wings at your next
cook out, then witness them smashing
your summer with a slam of awesomeness.
“The beauty in these bodacious bad boys,
beyond them being a double hit of pork, is that
you can still put them together after a skinful of
icy cool beers. Four ingredients, three minutes
of prep time and goof-proof indirect cooking
means that even if you’re slurring your words
and falling over your own feet, you’re gonna
nail these and maintain your reign at the grill.”
THE RECIPE
Takes:
45 minutes
Ingredients:
A stack of inch-thick
pork chops
DJ BBQ’s Mix Of Rad
(see recipe below)
Streaky bacon
Barbecue sauce
+ Soaked cocktail sticks
Mix Of Rad:
2 tbsp soft brown sugar
1 tbsp sea salt
1 tbsp black pepper
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp onion granules
1 tbsp garlic granules
½ tsp mustard powder
½ tsp chilli flakes
02Wrap your streaky bacon around the
length of your pork fingers, using
more than one rasher if necessary.
Stab a few soaked cocktail sticks
through each one to hold them in
place, and reapply your Mix Of Rad
again for more flavour.
03Whack your meat on to the
grill at a medium heat, and
cook for 45-60 minutes.
Turn halfway through. “10
minutes before chow time,
slather on your BBQ sauce
for extra radness. If
you can find Sweet Baby
Ray’s sauce, use it!” DJ
BBQ advises. Serve with
more BBQ sauce for
dipping and get eating.

01Cut inch-thick, finger-length meat
strips out of your chops. “Yeah,
losing the flavoursome fat feels all
wrong, but the fat of the bacon will
make it so right, trust me,” says DJ
BBQ. Make your Mix Of Rad and
sprinkle on generously to coat.
