4. WHAT IS COFFEE: FROM FRUIT TO SEED

• During coffee brewing, the soluble solids within coffee grinds dissolve into
water (solvent).
• ~30% of coffee is soluble in water
• Ideal extraction: 18-20% of soluble solids results in a good brew
• More: Over-extracted and tastes bitter
• Less: Under-extracted and tastes sour
