COLD STORAGE AND COLD SUPPLY
CHAIN MANAGEMENT OF
HORTICULTURAL CROPS(FRUITS
AND VEGETABLES)

INTRODUCTION
 Cold Chain is a logistic system that provides a
series of facilities for maintaining ideal storage
conditions for perishable products from point of
origin to the point of consumption.
 It extend and ensure the self life of products such
as fresh agriculture produce, seafood, frozen
food etc.
 Cold chain retains the longevity of product
characteristics, active ingredients, freshness &
nutritive value.
 India is 2nd largest producer of fruits and
vegetables in World. 70-75% of these fruits and
vegetables are consumed fresh while 20-30% are
wasted and only 2-3% is processed.
 The major reason for low processing and high loss
of fruits and vegetables is the lack of proper cold
supply chain management (including cold
storages).
 The total value of post harvest loss of fruits and
vegetables is estimated to be over Rs 40000
crore.
 At present The Cold chain market in India is only
around $13 Billion.
 Currently there are roughly 7000 Cold storages in
India with capacity of around 32 million tonnes, out of
which 80% is used exclusively for Potato and
remaining 20% is used for fruits, other vegetables,
processed foods etc.
 There are around 30000 refrigerated vehicles in India
out of which 80% are used only for transporting milk
and milk based products.
 Due to poor cold supply chain management the share
of India in global market is only around 1% which is
insignificant, despite being the 2nd largest producer.

 Packaging
 Warehousing
 Information Management system
(Traceability & Tracking)
1) Refrigerated Containers:- They are portable and can
be safely used to transport goods over long distances.
The temperature ranges from -40⁰C to 10⁰C.
2) Blast Freezers :- They are used in storing and
supplying frozen fruits and vegetables. Temperature in
blast freezers can be very low at -40⁰C .
3) Cold Rooms :- They are used as hygienic good
processing areas and in storage of fresh fruits and
vegetables.
 Growth in retail sector
 Shift towards horticultural crops
 Growth in processed food sectors
 Changing consumption pattern
 Demand from pharmaceutical sector
 Rising real-estate cost
 Location for cold storage
 Lack of proper Infrastructure
 High energy cost & power cuts
 Commodity specialization (capability of storing
single commodity only)
 Low awareness of labor in handling temperature
sensitive products.
 Cold Chain is supposed to be a major part
of an effective supply chain infrastructure
dealing with fruits and vegetables but its
capacity is quite less than the demand.
 Practically Cold Chain management is not
just about storage but it includes
temperature monitoring at each step from
production to the consumption.
 The availability of highly developed cold supply
chain infrastructure has done wonders in countries
like US, China & UK. It has not just helped in
increasing the income of farmers but also increased
their net output and changed the consumption
pattern.
 A well organized and managed cold chain reduces
spoilage, retains quality & flavour and guarantees a
cost efficient delivery to the consumers.
 A significant aspect of the system is that if any of the
link is missing or weak the whole system might fail.

  • 1. COLD STORAGE AND COLD SUPPLY CHAIN MANAGEMENT OF HORTICULTURAL CROPS(FRUITS AND VEGETABLES) BY :- AYUSH MISHRA

INTRODUCTION  Cold Chain is a logistic system that provides a series of facilities for maintaining ideal storage conditions for perishable products from point of origin to the point of consumption.  It extend and ensure the self life of products such as fresh agriculture produce, seafood, frozen food etc.  Cold chain retains the longevity of product characteristics, active ingredients, freshness & nutritive value.
  • 3.  India is 2nd largest producer of fruits and vegetables in World. 70-75% of these fruits and vegetables are consumed fresh while 20-30% are wasted and only 2-3% is processed.  The major reason for low processing and high loss of fruits and vegetables is the lack of proper cold supply chain management (including cold storages).  The total value of post harvest loss of fruits and vegetables is estimated to be over Rs 40000 crore.

  • 6.  At present The Cold chain market in India is only around $13 Billion.  Currently there are roughly 7000 Cold storages in India with capacity of around 32 million tonnes, out of which 80% is used exclusively for Potato and remaining 20% is used for fruits, other vegetables, processed foods etc.  There are around 30000 refrigerated vehicles in India out of which 80% are used only for transporting milk and milk based products.  Due to poor cold supply chain management the share of India in global market is only around 1% which is insignificant, despite being the 2nd largest producer.

  • 8.  Storage Surface -Refrigerated warehouses for storage of temperature sensitive products.  Refrigerated Transportation - Reefer trucks, Containers, ships and Trains for transporting temperature sensitive products.
  • 9.  Pre-cooling facilities  Cold Storages  Refrigerated Carriers  Packaging  Warehousing  Information Management system (Traceability & Tracking)

  • 11. 1) Refrigerated Containers:- They are portable and can be safely used to transport goods over long distances. The temperature ranges from -40⁰C to 10⁰C. 2) Blast Freezers :- They are used in storing and supplying frozen fruits and vegetables. Temperature in blast freezers can be very low at -40⁰C . 3) Cold Rooms :- They are used as hygienic good processing areas and in storage of fresh fruits and vegetables.

  • 19.  Cold Chain is supposed to be a major part of an effective supply chain infrastructure dealing with fruits and vegetables but its capacity is quite less than the demand.  Practically Cold Chain management is not just about storage but it includes temperature monitoring at each step from production to the consumption.
  • 20.  The availability of highly developed cold supply chain infrastructure has done wonders in countries like US, China & UK. It has not just helped in increasing the income of farmers but also increased their net output and changed the consumption pattern.  A well organized and managed cold chain reduces spoilage, retains quality & flavour and guarantees a cost efficient delivery to the consumers.  A significant aspect of the system is that if any of the link is missing or weak the whole system might fail.
