Central Luzon, officially designated as Region III, is an administrative region in the Philippines occupying the central section of Luzon. It covers 7 provinces, namely, Aurora, Bataan, Bulacan, Nueva Ecija, Pampanga, Tarlac, and Zambales, as well as 2 highly urbanized cities. The regional center is the City of San Fernando.
Region III is also known as the Central Luzon Region. As the name implies, it is located centrally in the large island of Luzon
The province speaks predominantly Tagalog, and in some parts, Ilocano. The working population is fluent in both the English and Filipino languages.

Pinangat is a coconut milk-
based dish using taro leaves,
meat, and chili.
Bicol Express is pure comfort food!
With pork cubes cooked in coconut milk
and chili peppers, it’s rich, creamy, spicy
and delicious!
Sinarapan It is believed to
be the world’s smallest
commercially harvested fish
(though not the smallest fish
known). The fish has an
average length of 12.5
millimeters
sili ice cream,
whose major
ingredients
include “siling
labuyo” and
coconut milk has
used the local
symbol of Bicol,
the chilli, and
created a
unique ice
cream flavour.

Sinantolan, is a Filipino dish
made with grated santol fruit
rinds, siling haba, shrimp
paste (bagoong alamang),
onion, garlic, and coconut
cream. Meat or seafood are
also commonly added, and a
spicy version adds labuyo
chilis
Kinunot is a Filipino
dish from the Bicol
province made with
flaked stingray,
moringa leaves and
chillies cooked in a
spiced coconut cream
sauce.
Ginataang Bilo-
bilo with Langka is
a Filipino snack
dish. It is composed
of glutinous rice
balls (locally known
as bilo-bilo),
coconut cream,
sugar, sago pearls,
and ripe jackfruit.

Kinalas is famous
noodle dish in
Naga city. It is very
similar to beef
mami and the only
thing you will
notice on their
difference is the
addition of thick
brown sauce on top
of the noodles
similar to a gravy.
TOASTED SIOPAO These white
steamed buns with meat filling called
siopao has evolved into a more
creative kind of siopao. toasted siopao
is baked directly in the oven without
steaming. So when it is cooked, the
texture is similar to bread with meat
fillings.

TINUMOK is gabi or taro
root leaves filled with mixture
of shrimps, flakes fish, buko
meat, onion, shrimp paste
and boiled in coconut milk.
This recipe is very similar to
ginataang laing
Sinalpungan is one of
the iconic dishes from
the island province of
Catanduanes. It is
often eaten alongside
drinking alcohol.
Carabao tripe is fried
with a lot of onions.
The tripe is
comparable in taste
to isaw
sinalpungan is
tougher and coarses
and has the strong
flavor of large animal
innards.

PUTAN This dish
is Masbate’s
version of Bicol’s
famous laing.
While the usual
laing consists of
taro leaves,
coconut milk,
pork, and chili,
‘Putan’ adds
langka and dilis to
their own version!
SUTUKIL Masbate is a haven for
fresh seafood such as scallops,
prawns, crabs, squid, and a variety
of fishes. The best place to have a
taste of these is at Sutukil, an
acronym for Sugba, Tula, Kilaw

KINUNOT NA PAGI is a Bicolano
dish of flaked stingray fish
or pagi cooked in a creamy
coconut sauce. The
term Kinunot is a Bicolano term for
flaking or hinimay in Tagalog.
The Gubat delicacy
“timitim” is a mixture of
grated cassava, brown
sugar, eggs, milk and
coconut milk, cooked the
slow and old way using
firewood.
HINAGOM The roasted
rice flour is cooked in
coconut milk with
melted sugar cane
sugar and cinnamon

Magayon Festival is
a yearly celebration
derived from the
legend of the
Mayon Volcano to
honor the
province’s bounty
and beauty. The
festival is held in
Legazpi City of the
Albay province on
Bicol island.

FESTIVAL
Unlike many of the festivals in the
Philippines, the Ibalong Festival doesn’t
take off religion or harvest. The festival is
based on the Ibalong Epic, which tells of
the story Ibalon who was joined by three
legendary heroes, Batlog, Handyong, and
Bantong reside. The three heroes rid the
town of monsters, saved the people from
a great flood, and laid the laws of the
land.

indigenous materials.

old Catandunganon term which

Dayaw is an old Tigaonon term which
means �to show off, parade or display�. In
its strictest meaning, dayaw is to present
with pride what is distinctly and essentially
inherent in a person. Dalan on the other
hand, means in olden times, a mountain
trail which now includes path, street and
highway. Dayaw Dalan Festival symbolizes
the best of what the municipality of San
Jacinto have as a town and as a people. The
festival is held in honor of its patron saint,
Santo Cristo de Burgos.
