Acetic anhydride is a colorless liquid that smells like acetic acid. It is the simplest isolable anhydride of a carboxylic acid. Acetic anhydride was first synthesized in 1852 by heating potassium acetate with benzoyl chloride. It is widely used as a reagent in organic synthesis. Some key uses of acetic anhydride include preparing cellulose acetate fibers and plastic, acting as a dehydrating and acetylating agent in producing pharmaceuticals, dyes, perfumes and explosives, and esterifying food starch at concentrations up to 5%. Acetic anhydride is also versatile for acetylations by introducing acetyl groups to organic substrates.
