Antinutrients are compounds found in plants that can interfere with nutrient absorption and digestion. They are most commonly found in grains, beans, legumes and nuts. Some key antinutrients include lectins, which can damage the gut wall and cause issues like leaky gut; trypsin inhibitors and protease inhibitors, which prevent protein digestion; and phytates, which reduce mineral bioavailability. Proper cooking and food processing can reduce antinutrient levels in many plant foods.
