Baby carrots stored in microperforated film bags had less whitening and moisture loss compared to those stored in macroperforated bags. Experimental data from the Perfotec system, which measures respiration rates and controls oxygen levels, confirmed this. Optimal oxygen and carbon dioxide levels for storing baby carrots at 7°C are 5-10% for both gases. Regular respiration measurements allow adjustments to packaging to maximize shelf life. The Perfotec system was shown to improve baby carrot shelf life.
