Chocolate and the process of making
From the cocoa tree to your favorite dessert. See how chocolate
is made, what contains and how the cocoa beans look like.
It all starts with the beans extracted from the well-baked fruits of
the cocoa, growing in tropical areas. The beans are left for
fermentation for a few days, during which they get a brownish
color and the characteristic cocoa taste.
Remove the impurities after which the cocoa beans are roasted so
that the flavor becomes stronger, then cleansed from the shell.
We have already obtained the most important ingredients of
chocolate, cocoa liquor and cocoa butter. To these are added
powdered milk, sugar and vanilla, and the various combinations of
these ingredients make the three types of chocolate.
• The bitter chocolate contains cocoa butter, cocoa liquor, sugar,
and sometimes vanilla.
• Milk chocolate contains cocoa butter, cocoa liquor, sugar, milk
powder and vanilla.
Are kept for hours or even days in huge mixers, after which they
are cooled and heated successively at carefully selected
temperatures.
