INGREDIENTS
• Approximately half of chicken and cut into bite
size
• 10 bird’s eyes chillies
• 2 cloves of garlic
• 4 shallots
• 1 inch fresh turmeric
• 2 stalks lemon grass
• 1 slice of dried tamarind
• 200ml of coconut milk
• 2 tbsp of cooking oil
• 1 cup of water
• 1 tsp of salt and sugar
5. Have all your ingredients portioned out and
ready .Blend all your pound or aromatics
(garlic, chillies, shallots and turmeric)

Heat the pan over medium heat. Here you
can choose to precook the chicken in the
hot pan to rid the chicken from any
access water. Then, add the oil into the
pan and fry your aromatics including the
bruised lemongrass until fragrant

Add a cup of water and let it boil. Add
tamarind slice and let it simmer about
10 minutes or until the chicken
thoroughly cook. Add salt for
seasoning and sugar to balance the
sourness from tamarind slice.
