2. ChickenChettinad
Cooking Time: 45 mins Serves: 3 people
Ingredients:
• 600 gms chicken breasts (washed/drained)
• 150 gms shallots (finely chopped)
• 12 cloves minced garlic, 1 2 inch minced
ginger, 1 3 inch cinnamon pieces
• 1 tblsp fennel, 3 chopped stone flower
• 4 sprigs curry leaves, 2 tblsp oil
• ¾ tblsp Kashmiri red chilli powder, black
pepper corns, fennel seeds, coriander seeds
for preparing fresh spice mix

• Apply sea salt to the chicken and keep it aside
for some time
• Take a kadhai and heat oil on a medium flame.
Add fennel, stone flower and cinnamon and let
it fry for a minute
• Then add shallots along with curry leaves and
salt. Let the shallots fry until golden brown
• Add chicken to the mixture and let it cook for
about 5 minutes. Stir periodically so as to have
a consistent mixture

• Add all fresh spices & sugar and cook for 10
mins. Then add ½ cup water and let it cook for
20 mins. Cover the vessel
• Keep tossing the chicken in between and add
water/spices if required. Once cooked properly,
remove from flame and serve hot
• Tip: While using stone flower, remove the black
bits and clean it. This will help enhance the
flavors of the lip-smacking Chicken Chettinad!

5. ButterGarlicPrawns
Cooking Time: 15 mins Serves: 2 people
Ingredients:
• 10-12 small prawns (de-shelled & de-veined)
• 1 tblsp butter
• 12 cloves peeled & finely chopped garlic
• Salt & black pepper to taste
• Juice of a medium sized lemon
• ½ cup finely cut coriander for garnishing

• Use a non-stick flat pan and add butter to it on
medium heat
• Add chopped garlic to the heated butter and
sauté it for about 30 secs
• Add prawns to the sautéed mixture and cook
them for about 5 mins without stirring/ turning
over
• Flip the prawns, add salt and pepper and let
the other side cook, to have a uniformly
cooked mix

• Add lemon juice, stir properly and let it get
cooked for about 5 mins
• Remove the mix to a plate and pour down the
spicy liquid mix over it from the pan
• Can add more lemon juice and coriander for
garnishing and voila! Your Butter Garlic Prawns
are ready to be enjoyed with chilled beer.
• Tip: Marinade prawns in salt and lemon juice
for 10 – 15 mins to make them more juicy

8. SingaporeFriedRice
Cooking Time: 30 mins Serves: 4 people
Ingredients:
• 3 cups cooked rice, 150 gm chicken
• 2 garlic cloves & 1 cup onion both chopped
• 2 tblsp chopped spring onions
• 3 cups vegetables (carrots, peppers)
• 2 tblsp vegetable oil, sesame oil, chilli sauce
• 1 tblsp light soy sauce
• 1 slit green chilly
• Salt to taste

• Take both oils in a wok and heat them. Then
add garlic, green chilli & onions and stir until
the mixture turns golden brown
• Add chicken to the mixture and stir it for a
couple of minutes until brown
• To the mix, add all the vegetables and mix well
• Also add the cooked rice to the mixture and
stir properly and let it cook for some time

10. WayToGo!
• Add soya sauce and chili sauce and stir until
the mixture gets coated properly. Let the
mixture be cooked for about 2-5 minutes
• Remove from the pan into a serving bowl and
garnish it with salt and green onions. Serve hot
• Tip: Keep the vegetables half cooked to have
some crunchiness along with lots of flavor &
make an awesome Singapore Fried Rice treat!
