There was a time when fluctuating, seasonally focused
menus were a thing of fine dining. Nowadays, however,
even chain restaurants have bought into the trend and
menus showcasing rotating dishes comprised of seasonal
ingredients are commonplace.

Whether you know it or not, your coffee menu is likely seasonal as coffee is
inherently a seasonal product. In most producing countries, it’s only harvested
once or twice a year, and it’s got a finite lifespan (well processed green coffee will
last about a year).
While seasonal beverage menus at cafes are also becoming increasingly
common, for a shop that has not implemented this sort of program yet – but
would like to – it can seem like a daunting endeavor.
If you’re curious to try a seasonal program or have one already but could use
some ideas to riff on, here are a few suggestions from us at KLLR Coffee on how
to spice up your Fall Beverage Menu.

recipes for two simple syrups.

7. Syrup Recipe 1 –
Pecan Simple Syrup
Procedure
- Bring water to a boil
- Stir in sugar until dissolved
- Add pecan pieces and return to a boil
- Reduce heat and simmer for 20 minutes
- Remove from heat and allow to cool to room temperature
- Strain out pecan pieces
Ingredients
- 8 oz. water
- 8 oz. sugar
- 4 oz. pecan pieces
8. Syrup Recipe 2 –
Spice Maple Simple Syrup
Procedure
- Bring water to a boil
- Thoroughly stir in maple syrup
- Add all remaining ingredients
- Reduce heat and simmer for 20 minutes
- Remove from heat and allow to cool to room temperature
- Strain out spices
Ingredients
- 8 oz. water
- 8 oz. maple syrup
- 10 cardamom pods
- 10 all spice berries
- 6 cinnamon sticks
9. Syrup Recipe 3 –
Pumpkin Spice Sauce
Procedure
- Bring water to a boil
- Add sugar and stir until dissolved
- Reduce heat and stir in pumpkin puree
- Simmer for 20 minutes
- Remove from heat and allow to cool to room temperature
- Stir in vanilla extract
*Use 30g sauce for a 12 oz. latte
Ingredients
- 8 oz. canned pumpkin puree
- 16 oz. water
- 1 cup brown sugar
- 1 cup white sugar
- 4 grams ground cinnamon
- 3 g ground ginger
- 3 g ground nutmeg
- 1.5g ground clove
- 5g vanilla extract
11. Beverage 1 –
S’moretado
Procedure
■ Pull espresso into a shot glass
■ Add mocha sauce, vanilla syrup, and espresso to cortado glass and stir
■ Steam milk as for cortado and fill to just below the rim of glass
■ Sprinkle with graham cracker dust
■ Toast marshmallow and garnish
Ingredients
- 2 oz. espresso
- 0.5 oz. mocha sauce
- 0.5 oz vanilla simple syrup
- Steamed milk
- Graham cracker crumbs
- 1 Marshmallow
12. Beverage 2 –
Maple-Pecan Iced Latte
Procedure
■ Pull espresso into shot glass
■ Add almond butter and Spiced Maple Simple Syrup to espresso and whisk thoroughly
■ Fill glass ¾ with ice and add the espresso/almond butter/simple syrup mixture
■ Add almond milk to top of glass
■ Top with Pecan infused whipped cream
■ Sprinkle with ground cinnamon and garnish with pecans
NOTE: To create as frappe, blend with your usual dose of frappe powder

- 2 oz. espresso
- 30g almond butter
- 2 oz. Spiced Maple Simple Syrup
- Almond milk
- Pecan infused whipped cream
- Ground cinnamon
- Ice
13. Beverage 3 –
Hot Cascara Cider
Procedure
- Steep KLLR Cascara with 185F water for 5 minutes
- Add Spiced Maple Simple Syrup to latte mug
- Decant steeped cascara into mug
- Sprinkle with ground cinnamon
