Vitamins are organic compounds that are essential for normal growth and nutrition. They cannot be synthesized by the body and must be obtained through diet. There are two types - water soluble and fat soluble. Water soluble vitamins dissolve in water while fat soluble vitamins require fat to be absorbed and can accumulate in body fat if consumed in excess. A lack of vitamins can lead to nutrient deficiencies which impact growth and development.
