Fish soup
1. FISH SOUP
Ingredients:
1 grouperfish
400 g of Shrimp
500 g clams
4 onions
4 clovesof garlic
6 cupsof Tomato concentrate
1 Dry chilli
1 dl of white wine
1/2 spoonof red pepper
2. 2 bayleaves
2 large potatoes
2 carrots
1 cup of macaroni noodles
1,5 dl of olive oil
salt
pepper
coriander(optional)
How to prepare this dish:
Put some water in a saucepan with a pinch of salt and cook the fish for about 15 minutes. After
those 15 minutes take the fish out of the water and remove the skin and fish bones. Put the fish
aside torest and keepthe waterthatwas usedto boil the fishtobe used lateron as a broth.
Meanwhile, in another large saucepan add the olive oil with the onions and the minced garlic and
let it braise for a bit. Then, add the tomato concentrate and the chilli, mix and let it cook for a few
minutes.Pourthe white wineandletitslightly evaporate.
Add half a pepper and the bay leaf, let it cook for a moment and then add a bit of that reserved
fish water if necessary. After that, add the potatoes and the carrots in cubes and a little bit more
of the water,letitcook from5-10 minutesina low heat.
Add more fish broth and let it boil, then add the macaroni noodles and let it cook for 8-10 minutes
on a low heat. Add the shrimp, the fish that was set aside in the beginning, the clams and let the
soupcook for a final 5-10 minutesuntil the clamsopen.
Take out the bay leavesandserve (withcorianderasa garnishif wanted).
