Jamaican Rice And Peas

  1. 1. Jamaican rice and peas A Jamaican meal.
  2. 2. Ingredients (A very important step) <ul><li>You will need: </li></ul><ul><li>2 tbs. vegetable oil </li></ul><ul><li>¼ cup of sliced onions </li></ul><ul><li>2 cloves garlic </li></ul><ul><li>2 stalks scallion </li></ul><ul><li>½ tsp thyme </li></ul><ul><li>1 plump tomato (cut up) </li></ul><ul><li>1 tbs. salt </li></ul><ul><li>1 tbs. Pepper </li></ul><ul><li>¼ tsp. ground allspice </li></ul><ul><li>2 bay leaves </li></ul><ul><li>1 16oz. can of coconut milk </li></ul><ul><li>1 16oz. can red beans </li></ul><ul><li>3½ cups water </li></ul><ul><li>2 cups parboiled rice </li></ul><ul><li>1 Scotch bonnet pepper (whole stem intact) </li></ul>
  3. 3. Utensils (You need them to cook) <ul><li>Needed items: </li></ul><ul><li>Liquid measuring cup </li></ul><ul><li>Dry measuring cup </li></ul><ul><li>Large stirring spoon </li></ul><ul><li>Gallon pot </li></ul><ul><li>Stove </li></ul>
  4. 4. Directions <ul><li>In pot add ¼ cup of sliced onions crushed garlic chopped scallion and cut up tomato in to pot </li></ul><ul><li>Add thyme and vegetable oil </li></ul><ul><li>Sauté </li></ul>
  5. 5. <ul><li>Stir in black pepper salt ground allspice and bay leaves cont. sauté </li></ul><ul><li>Pour coconut milk and red beans, stir and boil for approx. ten minutes </li></ul>
  6. 6. <ul><li>Add rice and water and cont. stirring </li></ul><ul><li>Add bonnet pepper and bring pot to a boil </li></ul><ul><li>Cover pot and turn stove down to a low setting for about 30 min </li></ul>
  7. 7. <ul><li>Serve hot with any meat dish preferably curried goat thus making </li></ul>Jamaican National Meal
