2. WHAT
IS PREDICAT?
Predicat means in catalán
"predicate". Predicat, is the
result of doing an action that is
performed by a subject.
In this case the subject is the
man himself, and the result of
the action or work is Predicat,
our wine from Priorat.

3. THE GRAPES
Carignane , Grenache and Merlot.
Generally small grapes, with sparse density, and
due to its location, with concentration of wine
components. The tortuous geography of this area
means that many vineyards are worked as
“costers” (Catalan word meaning steep slope)
which are so steep than in some areas terraces
have been built. Some of these terraces are so
narrow that there is only space for two rows of
vines, meaning that the vineyard cannot be
worked with farm machinery. The resulting
landscape, which these vineyards provide us with
are one of the defining characteristics of the
Priorat, giving it a distinctive personality
Born of the soil and the region’s specific climate,
vines planted here tend to suffer and as a result
harvest yields are very low – at less than 1 kg per
plant on average. This however means that the
wines produced in this area have a very unique
personality.
4. LICORELLA: OUR TERROIR
The soils are shallow, usually from a single horizon and immediately
below (about 10-15 cm) is the bedrock. They have a low organic
content matter and are formed mostly by the disintegration of the
slate, which is called llicorella, and are laminated and broken
rocks of a dark copper colour between which the roots of the vines
dig deep in search of moisture, water and nutrients.
5. PRIORAT
D.O.Q.
Priorat is a valley surrounded by a large mountain
range that makes it almost impossible for clouds
to penetrate into the valley to give water.
This has the effect that we have a warmer
summer and a colder winter than in other areas
of Spain.
– Altitude: 100 to 450 meters
– Rain: 120 to 150 Liters/m²
– Mediterranean climate
– Characteristics of the wine: very concentrated,
with a specific aroma and flavour
– Yearly grape production: 60’000 kg and 850
grams per vine.
The DOQ Priorat is the only “Qualified” wine
appellation in Catalonia and is one of only two
which exist in Spain. This quality seal demands a
series of conditions based on quality and the
implementation of certain wine production
systems. The DOQ Priorat's character means its
wines are unique and exclusive.
6. WINEMAKING
Made from grapes from 35 year old vines, planted on licorella
soils and fermented for 16 days at 19 °C .
It remains in French oak for 9 months.
The aroma and the taste shows a great integration of the
grenache and the carignane grapes and gives nuances of fresh
black fruit with slight touches of vanilla.
7. TASTING
NOTES
Very intense red colour and
bright violet.
A nose of rosemary and flower
aromas such as fresh violets,
black and red fruit, spices,
cocoa and tobacco.
In the mouth has a creamy first
impact, greedy and deep. It has
a firm structure and a good
tannic route, accompanied by a
very well integrated wood,
combining with the good acidity,
rounded and with a fresh end.
8. THE FAMILY
GRIFOLL
DECLARA
The wine cellar of the Grifoll
family goes back to 1880. Many
generations of the Grifoll family
have been producing wine from
their own vineyards at “El Molar”.
In 2001, when the new cellar
“Cellers Grifoll Declara” was
founded to produce and age
great wines under the
designation of origin Priorat &
Montsant.
The cellars (Priorat & Montsant),
vineyards and all equipment are
privately owned by its members.
9. Predicat Red Wine
D.O.Q. Priorat
Varietals: Carignane 50% Grenache 40% Merlot 10%
Vintage: 2014 Alcohol: 14% Winemaker: Roger Grifoll.
Winemaking: Made from grapes from 35 year old vines, planted
