THE ARTISAN FOOD CO
The ARTISAN
FOOD CO
intended to
launch a series
of food
experiences,
with each new
environment
focused on
one of ten
different
specialist
foods. The
challenge for
this project
was to devise
an interior
solution for
one specialist
food. Along
with devising a
proposal and
selecting a
suitable site
from the
available
range, the
design should
be creative
and
contemporary.

The audience will

Asia as this food style
originates from JAPAN.

sushi is more of a
sophisticated delicacy.
The fact that the
purpose of the
restaurant is to serve raw
fish may also narrow
down the number of
consumers. Hence the
restaurant is mostly to
accommodate an
intimate and cosy
artisan dining
experience.

menu consisting of the

Clean environment.
Customers want clean seats,
tables, plates, glasses and rest
rooms, etc. to make their
experience more enjoyable
and worthwhile.
Customers require a greeting
service. This is to acknowledge
their presence and either take
reservations, show them to
tables or ask them to wait.
Customers expect a good
wait staff – that do not hover
or interrupt but solve problems
quickly and efficiently.
Hospitality is one of the most
crucial yet also most over
looked expectation of a
consumer. All staff members
need to be hospitable and
friendly to make the consumer
feel more welcome and
create a memorable time for
the customer.

After laying down the requirements and function of the sushi restaurant, I analysed multiple sites and arrived at the
conclusion that SITE 1 was the best choice for my designed space.

Reason for choice
• It will provide an intimate dining experience which is
ideal for a sushi restaurant
• Curved ceiling gives opportunity for bold ceiling
structure
• All functional zones are interlinked and so need to be in
close proximity to one another, on the same floor

With a clear understanding of the brief, along with the perfect site for my design, I created a few concepts for my design
direction.

COMBINING CONCEPTS
The most unique and
standout concepts
were these three.
Combining the best of
each element created
a unique and creative
interior space for the
sushi restaurant.
The SCALES concept
provides opportunity
for architectural and
sculptural
experimentation, the
OMAKASE concept
inspires the artisan
dining experience,
and the RAW concept
influences the
furnishing choices,
material application
and aesthetic appeal
of the interior.

Through filtration and
consideration, I realised that
the concepts needed a little
more refinement to be a
successful approach.
The overlapping of wood to
imitate fish scales provides
an excellent interior structural
feature that frames the
space.
The unique and precise
application of OMAKASE
cuisine will establish an
importance of the kitchen
and the bar and form the
backbone of the functional
aspect of the restaurant.
Using unique ideas to
replicate the peeling, slicing
and raw features of a fish,
the interior will be furnished,
finished and presented
accordingly.

IMPROVED CONCEPT
The new concept is inspired
from the exterior and interior
of the fish.
The outside of the fish is
embellished with beautiful
scales which overlay and
superimpose to form curving
overlapping patterns. This will
be reflected in the structural
design within the interior of
the sushi restaurant.
The inside of the fish is
reached by peeling and
scraping the surface of the
fish to reveal the raw and
tender meat inside. This idea
of peeling back to reveal the
raw and bare texture inside
inspires the furnishing style
and material finishing within
the interior environment.
The perfect blend of
structural and visual elements
inspired from the fish, inside
and out, is a unique and
modern representation of the
specialist ingredient within
the interior space.

With a clear idea of the direction of my design, I started planning each space and how it would interact with each other.

The designed environment is a modern representation of the
specialist ingredient.
The bold ceiling structure attracts attention with its overlapping and
layering effects and is a contemporary interpretation of the fish
scales and fish exterior.
The raw textures shown through peeling elements is a hint to the
preparation of fish.
An industrial approach compliments this design style to show the
bare, raw and fish prep style and enhances and highlights the
beauty of unfinished and raw materials.

- Kitchen should be well supplied with
necessary equipment and appliances.
- Consider health and safety when
designing furniture
- Keep all accessways and circulations
spaces free
- Since dishes use mostly fresh ingredients,
it would be better to have a small
pantry near the dining area

The name of the
restaurant signifies the
significance of fish in the
brand and also is a
reference to the
Japanese culture where
sushi has been created
from.
SAKANA (Japanese)
meaning ‘fish’, also gets
the customers talking
and increases social
interaction to discover
what the word means.

To create a finalised design style and approach, I created a concept description that details the style of my concept.
INSIDE OUT
CONCEPT DESCRIPTION
The concept for the interior of the restaurant is derived from the
external and internal features of the specialist food, FISH.
The structural elements are inspired from the overlapping scales
that form layers and give form, structure and cover to the fish. The
façade and aesthetic appeal of the restaurant will be inspired from
the preparational techniques that go into the making of sushi. The
intricate art of peeling the skin to reveal the tender and raw
textures within are a major attribution of this design concept. The
Japanese tradition of Omakase will give purpose and function to
the restaurant along with a communal retail pantry.

The lighting fixture created can be used in an array of
interior spaces such as
- Residential
- Restaurant
- Exhibition
- Hospitality
- Entertainment
- Retail
- Workspace
For this particular project, I have created this light
fixture as a highlight feature of the bar/counter space
within the sushi restaurant, SAKANA. It is to provide
accent lighting and create mood lighting during the
night to create an atmosphere of mystery and
intimacy while still portraying a part of the origin and
culture of the sushi cuisine by taking its inspiration from
the JAPANESE lanterns.

  • 3. THE ARTISAN FOOD CO The ARTISAN FOOD CO intended to launch a series of food experiences, with each new environment focused on one of ten different specialist foods. The challenge for this project was to devise an interior solution for one specialist food. Along with devising a proposal and selecting a suitable site from the available range, the design should be creative and contemporary.   • 6. FUNCTION Sushi Restaurant that serves best quality FISH along with other seafood complimentary items. SPECIALTY OF RESTAURANT: IT’S ALL RAW! Providing a fine dining artisan experience to customers Displaying ancient techniques of preparing the fish by a professional chef who prepares the dish in front of the customers Involving customer in the process of creating the dishes Teaching proper way of eating sushi by professional chefs Introducing the original Japanese tradition in a contemporary setting in dining experience Customers interact with chefs to learn background info on the sushi, fish, tradition and origin. Providing FISH in its raw form in sushi. Fish can cleaned, cut and prepared at a visible station. Each dish can be prepared and served at the table by chef. SO FRESH… IT’S BEST SERVED RAW

SPACE DINING SPACE PRIVATE DINING FISH PREPARATION WC PANTRY INTERACTIVE SUSHI BAR WITH CHEF STAFF/CHEF PRIVATE RELAXING AREA WAITING/ LOUNGE AREA The space of the restaurant will include multiple zones. The requirements are: - Area for customers to wait / book reservations - Reception/cashier area for payments and reservations - Dining areas, both private and interactive - Communal pantry to store kitchen supplies and food items - Private areas for the staff members and chefs to lounge and relax in - Restroom facilities for both customers and staff CASHIER KITCHEN
  • 9. My vision for the interior includes inspiration from the Japanese environment and technique but while using contemporary materials. It could be in a building, on any floor, but preferably the ground floor so customers do not have to take the extra step of using elevators.   • 11. The audience will include people of different ethnicities and nationalities, mostly from Asia as this food style originates from JAPAN. Customers can be anticipated to be of ages 20 and above as sushi is more of a sophisticated delicacy. The fact that the purpose of the restaurant is to serve raw fish may also narrow down the number of consumers. Hence the restaurant is mostly to accommodate an intimate and cosy artisan dining experience. GENRE - Individuals - Friends - Couples - Families AUDIENCE Consumers will require a menu consisting of the names of dishes in both languages, Japanese and English Consumers will require health and social needs. These include proper ventilation systems, ambient and accent lighting, ergonomic seating, easy access and circulation, rest room facilities, wheel chair friendly, and WIFI Clean environment. Customers want clean seats, tables, plates, glasses and rest rooms, etc. to make their experience more enjoyable and worthwhile. Customers require a greeting service. This is to acknowledge their presence and either take reservations, show them to tables or ask them to wait. Customers expect a good wait staff – that do not hover or interrupt but solve problems quickly and efficiently. Hospitality is one of the most crucial yet also most over looked expectation of a consumer. All staff members need to be hospitable and friendly to make the consumer feel more welcome and create a memorable time for the customer.

Since the highlight of the restaurant is fish, it is important to research all the types of fish used to create sushi, the preparation involved and the storage required NAME Researching name ideas and inspiration for the restaurant Brand Researching different branding ideas, signage, accent lighting, logo application and enhancing brand identity within interior ORIGIN Research Japanese tradition of preparing, making and eating sushi Space Requirements Researching minimum space requirements along with dimensions for a sushi bar restaurant Researching potential installation of aquariums and their relevance in the restaurant. MATERIALS Researching the popular material choices in Japanese cuisine. Research contemporary material options that work best with these influences and portray the desired mood of the restaurant Research the different cutlery, appliances and crockery, and ergonomic furniture required for this kind of cuisine SOCIAL Research interactive features to make restaurant more successful Research time required for different stages of sushi preparation
  • 13. After laying down the requirements and function of the sushi restaurant, I analysed multiple sites and arrived at the conclusion that SITE 1 was the best choice for my designed space.

Axonometric View Functional Suitability Pros And Cons • Curved ceiling structure • Varied ceiling heights adds dimension • Glass wall allows transparency and insight into store • Ceiling heights provide a large scale for vertical design • Easily accessible for customers and fire escape is also relevant and functional • Access to daylight • Proportionate structure • Relatively small space • No added storeys • No windows except front glass wall • Volume of store is limited because of curve of ceiling • Not suitable for, BAKERY, PATISSERIE, FISHMONGER, BIG RESTAURANT, - Brick work will restrain heat within space • Suitable for CULINARY BOOKSHOP, COOKERY SCHOOL, COOK SUPPLY STORE, NOODLE BAR, SEAFOOD BISTRO, NOODLEBAR, COFFEE CAFÉ, CHOCLATIER, CHEESEMONGER, TEA HOUSE Reason for choice • It will provide an intimate dining experience which is ideal for a sushi restaurant • Curved ceiling gives opportunity for bold ceiling structure • All functional zones are interlinked and so need to be in close proximity to one another, on the same floor

  • 29. COMBINING CONCEPTS The most unique and standout concepts were these three. Combining the best of each element created a unique and creative interior space for the sushi restaurant. The SCALES concept provides opportunity for architectural and sculptural experimentation, the OMAKASE concept inspires the artisan dining experience, and the RAW concept influences the furnishing choices, material application and aesthetic appeal of the interior.   • 30. Through filtration and consideration, I realised that the concepts needed a little more refinement to be a successful approach. The overlapping of wood to imitate fish scales provides an excellent interior structural feature that frames the space. The unique and precise application of OMAKASE cuisine will establish an importance of the kitchen and the bar and form the backbone of the functional aspect of the restaurant. Using unique ideas to replicate the peeling, slicing and raw features of a fish, the interior will be furnished, finished and presented accordingly.   • 32. IMPROVED CONCEPT The new concept is inspired from the exterior and interior of the fish. The outside of the fish is embellished with beautiful scales which overlay and superimpose to form curving overlapping patterns. This will be reflected in the structural design within the interior of the sushi restaurant. The inside of the fish is reached by peeling and scraping the surface of the fish to reveal the raw and tender meat inside. This idea of peeling back to reveal the raw and bare texture inside inspires the furnishing style and material finishing within the interior environment. The perfect blend of structural and visual elements inspired from the fish, inside and out, is a unique and modern representation of the specialist ingredient within the interior space. DESIGN & SPACE DESIGN ISSUES - Creating a different mood for day and night - Enhancing design elements but balancing with simplicity and unity - Creating easy circulation and access - Clear interpretation of design concept within interior environment - Branding - Creating a unified ceiling structure The designed environment is a modern representation of the specialist ingredient. The bold ceiling structure attracts attention with its overlapping and layering effects and is a contemporary interpretation of the fish scales and fish exterior. The raw textures shown through peeling elements is a hint to the preparation of fish. An industrial approach compliments this design style to show the bare, raw and fish prep style and enhances and highlights the beauty of unfinished and raw materials. CONSIDERATIONS - Kitchen should be well supplied with necessary equipment and appliances. - Consider health and safety when designing furniture - Keep all accessways and circulations spaces free - Since dishes use mostly fresh ingredients, it would be better to have a small pantry near the dining area
  • 40. NAME & LOGO The name of the restaurant signifies the significance of fish in the brand and also is a reference to the Japanese culture where sushi has been created from.   • 41. To create a finalised design style and approach, I created a concept description that details the style of my concept.
  • 42. INSIDE OUT CONCEPT DESCRIPTION The concept for the interior of the restaurant is derived from the external and internal features of the specialist food, FISH. The structural elements are inspired from the overlapping scales that form layers and give form, structure and cover to the fish. The façade and aesthetic appeal of the restaurant will be inspired from the preparational techniques that go into the making of sushi. The intricate art of peeling the skin to reveal the tender and raw textures within are a major attribution of this design concept. The Japanese tradition of Omakase will give purpose and function to the restaurant along with a communal retail pantry. Fish scales Raw Omakase

The lighting fixture created can be used in an array of interior spaces such as - Residential - Restaurant - Exhibition - Hospitality - Entertainment - Retail - Workspace For this particular project, I have created this light fixture as a highlight feature of the bar/counter space within the sushi restaurant, SAKANA. It is to provide accent lighting and create mood lighting during the night to create an atmosphere of mystery and intimacy while still portraying a part of the origin and culture of the sushi cuisine by taking its inspiration from the JAPANESE lanterns.
