As Owner/Operator - I designed and built TBC to run as a fast and efficient QSR very
similar to the Chipotle’s concept – I am a very hands-on operator holding daily staff
meetings – working with and training managers/shift leaders. I had set up operations to
reflect a corporate environment – complete with standardized recipe books w/photos,
prep-lists and sanitation procedures as well as “Team Accountable” opening and closing
reports.

assembling ‘Opening Teams’ for Ruth’s Chris Steak House as well as PF Chang’s, Z’ Tejas,
La Salsa and Café Brio all of which got their start in Scottsdale AZ.
