MUSHROOM AND PREPARATION OF
MUSHROOM SOUP

 Firstly the mushrooms are marinated in
yogurt…..
 and then cooked in the aromatic masala… the
methi leaves gives a beautiful aroma to the dish…
 This methi mushroom dish goes very well with
some rotis or naans.

6. MUSHROOM MATAR
Heat 2-3 tb sp oil in
a pan. Add finely
chopped 1 medium
sized onion and saute
till translucent.

 Add 1.5 tsp crushed
ginger-garlic or ginger-
garlic paste. Saute till the
raw aroma disappears.

8. MUSHROOM MATAR
Add 3 medium sized
finely chopped tomatoes
and 1 chopped green
chili. stir.

9. MUSHROOM MATAR
 Add the spice powders –
½ tsp turmeric, (¼ or ½)
tsp red chili powder and 1
tsp coriander powder.

 Stir and saute till oil starts
to leave the sides of the
onion-tomato masala
mixture.

11. MUSHROOM MATAR
 Add 200 grams chopped
mushrooms and (⅔ or
¾) cup peas/matar.

 Stir and saute for 2 to 3
mins.
 Then add 2 cups water and
salt as required. cover the
pan with a lid and cook till
the peas are softened.

 once done, sprinkle (¼
or ½) tsp garam
masala powder.

14. MUSHROOM PULAO
 Clean, wash and soak the rice
for 20 to 30 mins. When the
rice is getting soaked, chop all
the veggies. Rinse and chop
the mushrooms too.
 Take all the whole garam
masala and keep it aside.
 In a pressure cooker, heat oil.
Add the whole garam masala
including cumin, and fry till
they become fragrant. about
few seconds.

 Add the onions and fry them till translucent.
 Add the ginger-garlic paste and saute till the raw
smell of the paste disappears.
 Now add the chopped tomatoes, potatoes and
mushrooms. Saute for 8-10 minutes till the
mushrooms are half cooked. Keep on stirring in
between.
 Add the soaked rice and the chopped green chili.
 Saute the rice for 1-2 minutes stirring in between on
a low flame.

 Add the coconut milk and water. Stir and season
with salt.
 Pressure cook the rice for 2 to 3 whistles.
 When the pressure settles down on its own,
remove the lid and gently fluff the rice.
 Garnish with coriander leaves or mint leaves and
serve mushroom pulao with sliced onions and
lime. You could also have Mushroom Pulao
with onion-tomato raita.

23. CHICKEN CORN MUSHROOM SOUP
In a cooking pan add chicken
bones and garlic cloves and
as required water. Boil for
3-4 hours. When chicken
stock is ready discard the
ingredients.
Add sweet corn and chicken
in chicken stock and cook
10-15 minutes.
Add black pepper, salt,
mushroom and Chinese salt.
Mix it well.

24. CHICKEN CORN MUSHROOM SOUP
 Reduce the flame and add slowly beaten eggs while
stirring.
 When eggs are properly mixed and soup becomes frothy,
add corn flour paste slowly in the soup, when the soup is
thicken, remove it.
 Now dish out the soup in some bowl and garnish with
some chicken.
 Serve it with hot sauce, white vinegar, soya sauce and
chillies.
