1. MUTTON DO PYAZA RECIPE
Mutton do pyaza is a popular Indian mutton recipe that is mainly prepared from goat meat. It is a dry meat
preparation combined with similar quantity of onions and meat. Onion is provided in the curry in two different
manners, half of the onions is added as fried and the other half as raw.
PREPARATION TIME - 15 MINUTES
COOKING TIME - 30 MINUTES OR MORE
SERVE FOR – 5-6 PERSONS
INGREDIENTS
500 gm mutton
500 gm (6-7 medium) onions - half chopped & half ground to a paste
1/2 cup oil or ghee
4 cups dahi (yogurt) - hung in a muslin cloth for 1 hour to get about 2½ cups
Cinnamons powder - 1 tsp
2 tsp salt, 1 tbsp dhania (coriander) powder, 1 tsp dried ground ginger (sonth)
12 buttons onions
15-20 flakes garlic - ground to a paste with 3-4 tbsp water
6 chhoti illaichi (green cardamoms) - crushed

INGREDIENTS FOR GARNISH
1 tbsp chopped fresh coriander leaves
1 tsp shah jeera (black cumin seeds) - roasted and ground
1/2 tsp garam masala
PROCESS
Heat oil in a pressure cooker. Fry onions till golden brown in color. Remove onions from oil,
pressing them well to drain the oil. Keep aside.
Reheat the remaining oil and and fry the mutton on high flame for 10-12 minutes, stirring
well, till browned on all sides. Remove the mutton from oil and keep aside.
Heat the leftover oil again, remove from the heat and add 1 tsp red chilli powder. Immediate
add the ground onions. Mix well.
Whip the curd till smooth. Reduce heat and add curd to the onions. Add the fried meat also.
Cook on medium heat for 5-7 minutes.
Add salt, ground ginger and dhania powder. Mix well. Pressure cook to give 1 whistle.
Reduce heat and keep on low heat for 10-14 minutes. Remove from fire. Drop pressure by
putting cold water on the lid, uncover and dry the liquid on fire. Add button onions (optional).
Fry the meat on slow heat and add the garlic paste and mix well.
Add 4 tbsp hot water, fried chopped onions and crushed green cardamoms. Pour in an oven
proof dish. Covered with aluminium foil and place the pan in a very slow oven (250 degree F
or 120 degree C) for 15 minutes. Serve sprinkled with garam masala, ground roasted cumin
seeds and finely cut fresh coriander leaves.
