Veg Biryani Recipe
Veg Biryani is a Mughlai recipe It taste so good after mixing basmati rice, curd and cream,
indigenous ghee, green vegetables, dry fruits, and a lot of spices on a light flame.
This Delicious Veg Biryani is the favorite food of every human being. its taste, flavor, and
method of cooking are very easy and different. Come, let's check an easy way to make Veg
Biryani.
Ingredients for Veg Biryani
 Basmati rice - 1 cup
 Desi Ghee - 1/4 cup
 Cumin seeds - 1/2 tsp
 Turmeric powder - 1/4 teaspoon
 Oil - 1/4 cup
 Curd - 1/4 cup
 Ginger - 1-inch piece grated
 Green chili - sliced into 2 lengths
 Salt - as per taste (1.5 tsp)
 Saffron - 20-25 threads
 Cashew - 2 tbsp
 Raisins - 1 tbsp
 Coriander powder - 1 tsp
 Red chili powder - 1/4 tsp
Garam masala
 Large cardamom - 2
 Cloves - 5-6,
 Cardamom - 3,
 Nutmeg - 2 pinches crushed,
 Bay leaf - 1,
 Cinnamon - 1.5 inch,
 Black pepper - 7-8,

Green Vegetables
 Capsicum - 1 (cut into 1-inch pieces)
 Carrot - 1 (cut into 1.5 inch thin slices),
 Cauliflower chopped - 1 cup
 Coriander leaves - 2 tablespoons finely chopped,
 French beans - 10 (cut into 1-inch pieces)
 Mint - 10 - 12 leaves,
 Potatoes - 2
 Tomato - 2.
How To Make Veg Biryani
First, prepare the rice by boiling it. Then clean the rice, wash it well and soak it in water for
20 minutes, and then remove the excess water later.
Now put 5 cups of water in the vessel and keep it to boil, peel 1-inch lentil, 1 bay leaf, big
cardamom in water, and put 3-4 cloves together. Now when the water comes to a boil, put
the rice in the water and then cook 80 percent because the rice has to be cooked later,
because the rice will be cooked completely in it.
Till the rice is prepared by boiling, on the other side you should fry the vegetables, and then
heat them by putting oil in the pan on a high flame. First of all, peel the potato and cut it
into pieces lengthwise, Fry it after it becomes light brown in color.
Then add cabbage and carrot and fry it for 1 to 2 minutes on a high flame. After that add
capsicum also in oil and then fry it for 1 minute and take out (remember we have to keep
all the vegetables crunchy, we do not have to fry them for a long time).
When the rice is ready, rinse the water from it, the water from the rice will drain into the
pot, and then lift the rice sieve from the pot containing water and place it on another pot so
that it cools quickly.
Now fry the spices in the pan after frying the vegetables, prepare spices by frying them:
Add cumin seeds in hot oil and fry them, then add ginger paste and green chilies and fry a
little. After that add turmeric powder and coriander powder, fry the spices a little.
Cut the tomatoes in small pieces and give the pulses to the spices and fry the tomatoes till
they are mashed. Then add salt, red chili, and coarsely ground garam masala (black pepper,
2 long, half-inch cinnamon slit, peeled small cardamom, and coarsely chopped), mix well,
and fry the spices.
Now put curd in that spice and fry it a little, after frying, the spices are ready. Now add fried
vegetables to the fried spices and mix well. Now the vegetables for your biryani are
completely ready. And at this time, rice too has become cold and ready.
Veg Biryani Dum
Now take a big and heavy-bottomed utensil, and put 1 teaspoon of ghee in its bottom, and
then add half the rice and spread a layer of rice in the bottom of the pot, and now put the
prepared vegetable on top of the rice and spread the rice evenly, now put the remaining
rice on top of the vegetable and make it evenly and freeze it.
Now put cashew nuts, almonds, and raisins on the rice, after that put green coriander and
mint leaves, and then put 4 teaspoons of melted ghee all over.
After that put the saffron in 2 tablespoons of water in advance, put the saffron solution on
top of the biryani, and then close the lid of the biryani properly, and soak it for 15-18
minutes on low flame.
Now open the lid of the pot after the given time, and mix everything well. Now your hot Veg
Biryani Dum is ready. Now serve the biryani with curd chutney or raita and have fun.
Suggestion
If you like to eat onions, then cut 2 onions thin and fry them out, then put them on top of
the top layer of rice and put them on top, all other things should be prepared by applying
the same way. Again mix all the things, now your biryani is ready.
