KARNIYARIK Stuffed Eggplants <ul><li>Ingredients : </li></ul><ul><li>5 medium sized eggplants </li></ul><ul><li>2 medium sized onions. </li></ul><ul><li>3 medium sized tomatoes </li></ul><ul><li>300 grams ground meat </li></ul><ul><li>Pepper 2-3 pieces </li></ul><ul><li>½ bunch of parsley </li></ul><ul><li>½ tablespoons of tomato paste </li></ul><ul><li>1 cup of vegetable oil (for frying eggplants) </li></ul><ul><li>4 tablespoons of olive oil </li></ul><ul><li>Salt, black pepper </li></ul>
  3. 3. KARNIYARIK <ul><li>HOW TO MAKE : </li></ul><ul><li>Wash the eggplants. </li></ul><ul><li>Peel eggplants leaving lengthwise stripes </li></ul><ul><li>and then put them in salty water for 3 0 minutes. </li></ul>
  4. 4. KARNIYARIK <ul><li>Dry them well and fry them as a whole in a deep pot with vegetable oil . </li></ul>
  5. 5. KARNIYARIK <ul><li>And then, dry on a paper towel. </li></ul><ul><li>P lace eggplants on an oven dish. With the help of two spoons, s p lit eggplants into two. </li></ul><ul><li>But leave the tops and bottoms attached. </li></ul>
  6. 6. KARNIYARIK <ul><li>In a deep frying pan, heat olive oil. </li></ul><ul><li>Add onions and stir for 3-4 minutes. </li></ul><ul><li>Add ground meat and cook . </li></ul><ul><li>And then add tomato paste, stir until cooked. </li></ul>
  7. 7. KARNIYARIK Add chopped parsley and tomatoes. Add salt and pepper. Mix well.
  8. 8. KARNIYARIK <ul><li>Stuff eggplants with ground meat mixture. </li></ul><ul><li>Place a slice of half moon shaped tomato and a green pepper on top of each split belly eggplant. </li></ul>
  9. 9. KARNIYARIK <ul><li>Pour 1 cup of hot water on top . </li></ul><ul><li>Bake them in preheated oven at 150 C until green peppers are nicely baked. </li></ul>
  10. 10. KARNIYARIK <ul><li>Serve with rice and yogurt. </li></ul>Good appetite ! 
