• The nutrients in food enable the cells in our bodies to perform
their necessary functions. Nutrients are the nourishing
substances in food that are essential for growth& development
of body. Nutrients give our bodies instructions about how to
function.
MEDICINAL VALUE OF FOOD
•Cereals –
a. Rice – recommended for diarrhea. Rice gruel is best for
infants sufferingfromdiarrhea, as it is ideal fluidfor oral
dehydration. Because of its very low protein & alkalizing
effects it is very useful for gout or arthritis.
b. Barley- it is beneficial in cases of gastritis, dyspepsia, peptic
ulcers & colitis. Barley fiber prevents constipation & its
complication . E.g. colon cancer
c. Corn- it is goods source of soluble & insoluble fiber. it is
recommended for intestinal disorders. e.g. irritablebowel,
chronic renal diseases. it also reduces the cholesterol because
of bran which is present in sweet corn.
d. Wheat – the king of grains, Wheat starch is very easily
digested. Whole wheat contains bran so it has laxative effects
& prevents constipation. Wheat’s composition is the most
complete & balanced diet.
e. Oats – oats provide glucose, fatty acid, phosphorus & vitamin
B1 which are very important for neuron functions. So it is
recommended for nervous systemcomplaints e.g. fatigue,
insomnia, depression & mental exhaustion.
f. Rye – it provides flexibility to the arteries & improves
circulation so it prevents coronary heart diseases &
arteriosclerosis.
It has rich cellulose fibercontent which prevents constipation.
It is highly recommendedfor hypertension & patients with
colon cancer.
•Pulses –
a. Lentils – lentils are excellent sourceof iron, so they are usedfor
prevention of anemia.
 To prevents constipation.
 Its legumes are highlyrecommendedduring pregnancy because of its
iron, protein, fiber & folic acid contents.
b. Soyabean –
it helps women to maintain hormonal balance & is very useful
in regulation menstrual cycle, relief fromthe symptoms of
menopause.
It lowers the risk of breast cancer.
In man it lowers risk of prostate cancer& heart attack.
It is recommended for infants diet as it contains good quality
protein.
c.Beans – beans are recommended in case of itching skin, dry
skin, allergies & general dermatosis. It is also recommended for
hair loss, dandruff & seborrhoea.

Nuts & seeds
a. Walnuts – these are calledheart friendly, so recommendedfor
heart diseases & best tolerated for diabetic patients.
b. Sunflower seeds- the essential fatty acids in this seed impede
the progress of arteriosclerosis by lowering the level of
cholesterol in the blood.
• Sunflower seeds are rich in vitamin E which is a powerful
antioxidants to prevents blood clots & heart attacks.
• Sunflower seeds reducethe cholesterol level.
c.Pistachio – the most ironrich nut & is useful for anemic
patients.
d. Coconuts – this is mineral rich fruit which can be eaten raw, or
in the formof coconut water, coconut oil or coconut sauce.
it contains a fair amount of magnesium, calcium&
phosphorus. Magnesiumis found in bones & muscles. Its
deficiency leads to cramps & nervous excitability . So its
consumption is requiredfor bones, joints & muscles.
e. Peanuts – peanuts contains highest amount of niacin, so
peanuts are helpful in caseof pellagra characterizedby the
three Ds, dermatitis, diarrhea & dementia.

skin.

a. Redbeet- it is anti- anemic as it contains iron & vitamin C .
Beet is rich in potassium, Magnesium& Calcium.
 It is recommended I case of Gout, to decrease uric acid.
 Decreases blood cholesterol level.
 It is also prevent cancer.
b. Carrots – one hundred grams of carrots provide enoughbeta
carotene which producesvitamin A, almost three times of daily
requirements.
It is prevents & treats night blindness, keep conjunctiva moist
& can prevent cataract formation.
Carrots contain sufficient fibersalso, which prevent
constipation.
c. Spinach – Spinach is richin iron. 100g spinachprovides about
3 mg of iron. So it prevents anemia & can be suggestedfor
treatment of anemia.
It contain carotenoids so preventsvision loss.
Its regular use aids in reducing blood cholesterol.
100 gm spinach contain 195 mg of folic acid.It prevents fetal
malformation when given to pregnant women.
d. Radish – it promotes bile production, so it is good for liver &
gall bladderdisorders.
e. Cabbage- Cabbage juice heals ulcerative colitis & intestinal
parasites. Cabbage heals gastric ulcer. It acts as laxative due to
richfiber in it.
It is recommended for osteoporosis & decalcification due to its
calciumcontent.
It is recommended for coronary heart disease & obesity.
f. Potatoes – they are calledstomach’s best friends. Raw potato
juice neutralizes stomach acid , so it can be calledantacid.

i. Peas – peas are goodsources of vitamin B1, B2, B6, folic acid &
vitamin C . It acts as an antioxidant.

recommended for pregnant women & for nervous system
disorders.
k. Onion – effective against bronchitis & asthma because of
decongestant properties.
It also has anti- diabetic & cholesterol reducing activity.

l. Tomato – tomato sauce, soup or juice reduces prostate cancer &

m. Mushrooms – it is recommendedfor diabetic patients because
they reduce insulin need. Obese may eat mushrooms because
of their low calories contents.
MEDICINAL VALUE OF FRUITS
1. Banana – Banana is one of the most nutrition's & medicinal
fruit. It is quiterich in minerals, i.e. potassium, magnesium&
iron.
 Banana is very effective in diarrhea & celiac diseases.
 Banana are recommendedas ideal fruit for cirrhosis liver,
ascites & edema.
2. Mango –
It helps to maintain healthy skin as it contributes to proper
skin hydration & tone. Eating abundant amount of mangoes is
recommended in case of eczema, skin dryness & aging.
It is necessary for good vision. Mango consumption is
recommended for night blindness or optic nerve atrophy.
Mangoes are diuretic.
3. Kiwi –
It stimulates the immune system& increases the resistance of
the body. It prevents cold & flu.
It enriches the blooddue to iron, vitamin C , copper & folic
acid in it. It preventsanemia.
Kiwis are recommended for pregnant mothers as they
stimulate immune system& prevent birth defects.

4. Orange – it contains a fair amount of minerals & vitamins A,
B1, B2 , folic acid & vitamin C. 100g oranges supply 40-60 mg
iron.
During pregnancy , it help in development of fetal nervous
system.

9. Water melon – it is known as a gift to the kidney. It has both
diuretic & laxative properties. It is highly recommendedfor
disorders of kidneys, diabetes & obesity.
10. Melon – It is a source of livingwater. It contains 90 – 95%
water.
It enriches the blood with vitamins & minerals, thus facilitates
the filtration capacity of the kidneys. It is highly recommended
for earlystage of kidney failure, kidney stones, urinary
infections, arthritis & dehydration.
11. Loquat – it is known as ant diabetics fruit. It is recommended
for diabetic persons.
It prevents & also cures common cold.
It is good for liver diseases.

12. Lemon –
It has significant antiseptic effect.

It prevents thrombosis & oedema.

13. Papaya –

14. olive-
• They are called Mediterranean pearls. Eating 2 or 3 olives

CONDIMENTS
1. Aniseed (sounf) – Aniseeds is used for expelling wind, for
treatinginsomnia , for removing lice, mites & vermin.
2.Ajwain ( omum) – it relieves indigestion, flatulence &
colic.Ajwain seed with common salt & clove relieves cough &
nasal congestion.
3. Asafoetida(Hing)- It is used for expellingwind, to reduce
distension of abdomen & relieves toothache. It is used to treat
painful & excessive menstruation & leucorrhoea.
4. Caraway seed( Siya Jeera) – It relieves flatulence. Caraway acts
as antihelminthic, specially against hookworm. Caraway oil
prevents badbreath.
5. Cardamom( chhoti Elaichi) – Cardamomrelieves gas & heart
burn& is used to prevent indigestion. It removes foul smell
fromthe mouth & relieves hiccups when usedwith mint leaves.
6. Celery (Ajwain Ka Patta)- celery is very effective for indigestion
& prevents kidney stone formation. It is useful in the treatment
of insomnia.
7. Cinnamon ( Dalchini)- It is used in the treatment of sore throat
& influenza. It relieves flatulence & indigestion. It removes acne
& blackheads & prevents excessive menstruation.
8. Clove (Laung) –Friedclove mixedhoney controls vomiting.
Clove stub rubbedin water & applied over the styes gives relief.
9. Coriander ( Dhania) – It is useful for digestion. Drinking of
coriander water lowersblood cholesterol level & is a good
diuretic.
10. Curry leaves – Freshjuice of curry leaves withlime juice &
sugar is effective in morning sickness, nausea & vomiting.
Eating 10 fresh curry leaves bring down sugar in diabetic
patients.
11. Fenugreek (Methi Seeds ) –
 It improves function of salivary glands & improves sense of
taste& smell.
 It removes excessive mucus fromrespiratory tract.
 It reduces bloodsugar in diabetes.
 It removes bad breath& body odour.
12.Garlic ( Lahsan) – garlic
boiled in milk is effective in
asthma & lower highblood
pressure & prevents heart
attack.
13. Ginger ( Adrak) – it is useful
in dyspepsia, flatulence , colic
, vomiting. It relieves cough &
regulates menstruation.
Gingeracts as a pain killer
when applied on the face,
head& gum etc.
14. Pepper ( Kali Mirch) –
• Pepper is very effective in treatment of
common cold & fever.
• Boil pepperin milk & turmeric power &
drink . It prevents amnesia or dullness of
memory.
• It prevents throat irritation ( suck pepper
seeds with caraway seed & common salt).
• Pepper power withcommon salt prevents
dental caries, foul breath, bleedinggums,
painful gums, toothache.

15. Poppy seeds ( Khus- Khus) –
Poppy seeds with milk & sugar relieve insomnia.
It is beneficial in gripping pain after childbirth & colic painin
the testicles.
Brownedpoppy seeds taken with honey giverelief from
dysentery.
16. Tamarind (Imli) -
Pulpof tamarind relieves vomiting, flatulence & indigestion &
increases appetite.
It prevent scurvy.
Tamarind rasamrelieves cold.
Tamarind juice is given in fever & dysentery.
17. Turmeric ( Haldi) –
Dry power mixed in butter milk or plain water prevents
flatulence & chronic diarrhoea.
Turmeric is rich in iron& is usedin treatment of anaemia.
It is very effective for chronic cough, throat irritation & asthma.
