This document provides summaries of several dishes from the cuisine of Dagestan. Shashlik are kebabs made from marinated mutton, tomatoes, and onions that are cooked on a mangal stove and served hot, sometimes with wine or brandy. Avar khinkal is a dough made with yogurt that is rolled out, cut into pieces, boiled and served with lamb and garlic sauce. Manty are meat pies made with a dough that is rolled out, cut into pieces, filled with meat and steamed. Chebureky are fried Caucasian pies made by stuffing dough balls with meat and frying them until golden brown.

1. Some Dishes of Dagestan Cuisine

2. Shashlik (kebabs) Shashlik is one of the most popular dishes with both men and women here in Dagestan. It is cooked from marinated mutton,tomatoes and onions.

3. The pieces of meat, onion and sometimes tomatoes are stringed on the spades and are fried on a special frying stove called mangal.

4. Served hot, may be served with wine or brandy.

6. Manty (Pies with meat prepared on the steam) Make a dough mixing flour, salt and water. Roll out thin and cut into pieces 10x10 cm. Put the meat filling inside. Cover with the left dough and prepare on the steam.

8. Serve with garlic sauce, or with melted butter with red pepper.

10. Leave for fifteen minutes and then roll the balls into thin circles. Put meat filling and fry in a frying pan with oil until they become gold.

11. Chudu The recipe is nearly the same as cooking chebureks with the only difference that you can use different fillings – minced meat with different flavorings, boiled pumpkin stuffing, cheese and curds, etc.

14. Make either of such shape as in the previous picture or like dumplings. Boil until all of them come up.

15. Serve hot with garlic sauce or sour cream with minced garlic.

16. Fried Eggplants Take some good size eggplants, cut them along and rub them with salt. Leave for half and hour, them wash in plenty of water. Fry on a frying pan in sunflower oil. Serve hot. Enjoy!

17. The recipe is the same, but cut the eggplants into round pieces not too thick. Fry in plenty of oil. Serve with tomatoes and sour cream or mayonnaise.
