Sweet red pepper (SRP) paste is a traditional food of the region made using capsicum annuum with the purpose of using it beyond the harvesting season. A method combining the traditional methods and the industrial method was followed taking into consideration heat or non-heat treatment and each was with or without salt addition, with or without adjustment of pH using citric acid. Within the same drying temperature (50oC or 70oC) the moisture loss and slope were significantly higher in the first 7 drying hours compared to the rest 16 hours, but within these timeslots the water loss did not differ significantly. The water activity of SRP paste was around 0.98 with a total solid content of around 20%. The addition of citric acid to SRP paste will be classified as high acid food while those with no citric acid addition will be classified as low acid food. There was no significant difference concerning color, odor and Non Mouth Texture between all heat-treated (blaze heating) and non-heat treated, pH adjusted and non-pH adjusted and salted and non-salted SRP paste. As for the overall acceptability the non-heat treated and the non-heat treated and pH adjusted SRP paste scored significantly the lowest. There was however no significant difference between all the other heat treated and non heat treated, pH adjusted and salted and non-salted SRP paste. This information can be used to adjust the water activity (time of drying) and pH to change the kinetics of deterioration during SRP paste storage.

As a subtitle to this presentation, I used "why K fertilizer is almost always required but Ca is not, and the controlling role of N, among other examples to illustrate the point."
The quick reason why that subtitle is important to understand is this. Adding more nitrogen (N) makes the grass grow more, which naturally increases the demand of all other nutrients. That makes sense, because as the plant grows more, it produces more leaves and stems and roots -- it is a bigger plant. And when there is a bigger plant, in order to maintain nutrient levels in the plant, more of every nutrient will be required.
But why is potassium (K) almost always required as fertilizer, but calcium (Ca) is not? That is because grass in Hawaii, over the course of about a year, will use more K than is available in the soil. So if K is not added as fertilizer, the soil K will get so low that plant uptake of K may be too low. With Ca, that isn't the case. The amount of Ca in the soil is large, and the amount used by the grass is less, so even over a span of multiple years, the grass can obtain all the calcium it will use from the soil.

This presentation explains a simple approach that can answer both of these questions. For each essential element, and primarily for the macronutrients and secondary nutrients (K, P, Ca, Mg, S), one must find out how much is in the soil, compare that to the amount necessary in the soil to support good turf, and estimate how much will be harvested in the leaves of grass. By implementing this approach, one can determine how much of each element is required as fertilizer. As will be demonstrated, this approach both ensures that the grass is supplied with enough of each essential element, and it avoids gratuitous application of fertilizer.

Soil testing is the base for management decisions about fertilizer requirements. It involves the estimation and
evaluation of the available nutrient status and acidic reaction of a sample of soil. After testing, a fertility map is
prepared where the available nitrogen, phosphorous and potassium is marked as low, medium or high. Areas of
