Organisational study is the systematic study and careful application of knowledge 
about how people - as individuals and as groups – act within organisations. An organisational 
study encompasses the study of organisations from multiple viewpoints, methods and levels 
of analysis. Organisational studies is ―the examination of how individuals construct 
organisational structures, processes, and practices and how these, in turn, shape social 
relations and create institutions that ultimately influence people‖, organisational studies 
comprise different areas that deal with the different aspects of the organisations, many of the 
approaches are functionalist but critical research also provide alternative frame for 
understanding in the field. 
Purpose of the organisational study is to study the organisation at wide and the 
various departments of the organisation. Organisational study is conducted for the partial 
fulfillment of the requirement of the degree of Master of Business Administration(MBA) as 
per the university rule. Organisational study is conducted to get experience about the practical

SCOPE OF THE STUDY 
The study is mainly based on the details collected from each department. It provides a 
better understanding of functional level of each department, i.e., Finance, Marketing, Human 
recourse, Production, etc. Each and every activities of the company are studied very carefully 
with the data available. The study provides a wide scope which can provide funds of 
experience with regards to various practices existing in the organization. It also helps to 
bridge the gap between theory and actual practice of management. 
LIMITATION OF THE STUDY 
 As the officials were engaged in their routine work, it was rather difficult to spare 
their time for the detailed description. 
 There may be errors due to the bias of the respondent. 
 Because of the strategic importance of the company, management kept certain 
matters regarding the latest facts and figures strictly confidential. 
 Most of the data required is kept in head office.

PROFILE OF THE INDUSTRY 
India is the world‘s second largest producer of food next to China, and has the 
potential of being the biggest with the food and agricultural sector. The total food production 
in India is likely to double in the next ten years and there is an opportunity for large 
investments in food and food processing technologies, skills and equipment, especially in 
areas of canning, Dairy and Food Processing, Speciality Processing, Packaging, Frozen 
Food/Refrigeration and Thermo Processing. Fruits and vegetables, Fisheries, Milk and Milk 
products, Meat and Poultry, Packaged/Convenience Foods, Alcoholic Beverages and Soft 
Drinks and Grains are important sub-sectors of the food processing industry. Health food and 
health food supplements are another rapidly rising segment of the industry which is gaining 
vast popularity amongst the health conscious. 
The food industry has given us a food supply so plentiful, so varied, so inexpensive, 
and so devoid of dependence on geography or season that all but the very poorest of 
Americans can obtain energy and nutrients to meet biological needs. Indeed, the U.S. food 
supply is so abundant that it contains enough to feed everyone in the country nearly twice 
over- even after exports are considered. The overly abundant food supply combined with a 
society so affluent that most people can afford to buy more food than they need, sets the stage 
for competition. The food industry must compete fiercely for every dollar spent on food, and 
companies expend extraordinary resources to develop and market products that will sell, 
regardless of their effect on nutritional status or waistlines. To satisfy stockholders, food 
companies must convince people to eat more of their products or to eat their products instead 
of those of competitors. They do so through advertising and public relations, of course, but 
also working tirelessly to convince government officials, nutrition professionals, and the 
media that their products promote health or at least do no harm. Much of this work is a 
virtually invisible part of contemporary culture that attracts only occasional notice.

The ways in which food companies use political processes—entirely conventional and 
nearly always legal—to obtain government and professional support for the sale of their 
products. Its twofold purpose is to illuminate the extent to which the food industry determines 
what people eat and to generate much wider discussion of the food industry's marketing 
methods and use of the political system. 
WORLD SCENARIO 
In the last few decades the international trade in food products has grown by leap and 
bounds. An estimated 750000 tones of food valued millions of US dollars are now imported 
globally every year. Since the population increasing day and food is the basic need the 
demand for food products are increasing considerably around the globe. The food industry is 
complex, global collective of diverse businesses that together supply much of the food energy 
consumed by the world population. Only subsistence farmers, those who survive on what 
they grow, can be considered outside of the scope of the modern food industry. The US food 
system is a complex network of farmers and the industries that link to them. Those links 
include makers of farm equipment and chemicals as well as firms that provide services to 
agribusinesses, such as providers of transportation and financial services. 
INDIAN SCENARIO 
Food industry is one of the fast growing industries in India. India‘s ―Food and Agri‖ 
business stands prominent as the largest and diversified, offering immense, potential for 
growth and expansion. The Indian food industry is growing faster than IT and Parma. India is 
the second largest producer of food next to china and has the potential in India is likely to 
double in the next 10 years with the country‘s domestic food market estimated to reach US$ 
258 billion by 2015. 
However to ensure full-fledged presence, companies still have to overcome huge 
obstacle. One import is unviable in the large run. Indian food products are one of the cheapest

in the world and competing with these based on based on strategy of imports in unviable 
proposition. The Indian food market has experienced a good growth over the year. The 
economic liberation and high growth rate of economy has put a positive impact on the food 
and agricultural market in the country. This has led to lesser import and high rate of exports 
in terms of quality and quantity. After independence, the government put emphasis on 
making the country self-sufficient through increased food and farm production. Emphasis 
was given on the development of agriculture through better farming techniques, increased 
irrigation facilities, more use of fertilizers and so on. This really put a positive impact on the 
food processing industry which resulted in better yield. In 1960‘s, the government initiated 
the green revolution to increase the food grain production. Emphasis was given on 
forestation, irrigational projects, use of better quality seeds, improvised farming techniques 
and so on. 
The market liberalization policies in the 1990s led to favourable growth of the 
economy of India which also improved the food industry in the country, since then, the food 
industry has really developed to a great extent. More segments are coming up and also plenty 
of foreign companies are entering the Indian food market. There constraints on having a 
manufacturing presence as well. With control still on raw materials such a wheat and sugar 
and high import tariff regine, it would not easy for manufacturing companies to control costs. 
Both factors appear to give entrenched players and advantage. The demand explosion in India 
is predicted on the assumption that the customer mind set has to change. This will happen 
only when the price is right. In last few years, customers would wide have a favoured value 
for money option resulting in a noticeable decline in the premium by brands. 
The Indian customer has always been price-conscious. Against this backdrop, pricing 
is key issue to be resolved by these companies. This means companies have to invest 
substantially to absorb the initially. And the extent of these investments by both established 
and new entrants is likely to shape the future for the indian food products business. Rapid 
transformation in the lifestyle of Indians, particularly those living in urban Indians, has 
resulted in dramatic increases in the demand for processed food. The main reason why 
processed food is luring the urban Indians is the convenience that it offers to cooking, as they 
don‘t need to spend hours in kitchen to get that appetizing food. Growth in working women‘s 
population and prevalence of nuclear families with double income are other trends easing this 
change in life style of Indians.

The food processing industry provides vital linkages and synergies between industry 
and agriculture. The Food Processing Industry sector in India is one of the largest in terms of 
production, consumption, export and growth prospects. The government has accorded it a 
high priority, with a number of fiscal reliefs and incentives, to encourage commercialization 
and value addition to agricultural produce, for minimizing prepost harvest wastage, 
generating employment and export growth. 
The most promising sub-sectors includes soft drink bottling, Confectionery 
manufacture, Fishing, aquaculture, Grain-milling and grain-based products, Meat and poultry 
processing, Alcoholic beverages, Milk processing, Tomato paste, Fast-food, Ready-to-eat 
breakfast cereals, Food additives, flavors etc. 
STATE SCENARIO 
Kerala has always been ‗Leader State‘ in food processing sector. It has been a 
major exporter of spices, cashews and marine products since independence, accounting for a 
considerable portion of the country‘s exports. The prominence of food sector in kerala is 
highlighted by the fact that the state has highest per capita expenditure on food in the country. 
The Industries Department of the State Government has drawn up a blueprint of 
the business incubator ―system that it intends to put in place as a mean to promote small and 
medium industries in the state. The proposed system is so designed as to provide a network of 
supporting services to the entrepreneurs to convert new and innovative technologies into 
products and market them. The sectors that have been identified for introduction of business 
incubators include low-end information technology, biotechnology, electronics and food 
processing. 
The food processing industry has been recognized as a potential area for 
development of enterprises in the state. Kerala is the largest producer of rubber, cocoa, 
pepper and arecanut. It is also a leading producer of coconut and cashew. The state has a high 
proportion of small scale industries engaged in processing its agricultural product. Kerala 
Industrial Infrastructure Development Corporation (KINFRA) set up a world class food park 
at kakkancherry, Malappuram in 2002. Four units with a total investment of US$2.5 million 
have started functioning at the park.

Parisons, a legacy of trust envisioned by late Janab A.V.Kunhipari in the 
1950's.From its humble beginnings in a small hamlet to a leading corporate entity in south 
India; the group recorded a phenomenal growth over the years. Thanks to the farsighted 
vision of the founder and the commitment of the younger generation to carry forward this 
glorious legacy. 
Success of its initial ventures resulted in rapid expansion of wheat flour business 
with acquisition of several Roller Flour Mills and key Brand names. The activities of the 
promoters diversified in to Rubber, Tea Plantation, Infrastructure leasing etc and caused to be 
known as distinguished leading business group of Kerala. The ability of the group to acquire 
closed milling units and make them profitable ventures with in short span of time resulted in 
the group becoming the market leader in Wheat Flour Business. 
The Parisons Group with their corporate base in Calicut Kerala are the largest 
manufacturers and marketers of two basic food commodities, Wheat Flour and Edible Oils in 
South India. Started in a humble way, PARISONS has reached a stage that it has grown into a

The Parisons Group has distinguished itself as one of the leading business groups 
in Kerala notching up a total turnover exceeding 1000 crores. The Group started out as a 
Trading outlet in Big Bazaar, the business hub of North Malabar in 1982, and has reached 
this distinction during the past decade and a half. The first manufacturing unit was 
established in 1992, and now the group has a total processing capacity of 600 MT for Wheat 
flour milling and 380MT for edible oil refining per day. 
The saga of success of the Parisons Group started in 1992 when the flagship 
company The Parisons Roller Flour Mills Pvt. Ltd. was set up in West Hill Calicut. The 
company owns a 120 TPD Roller Flour Mill is now the market leader in its segment with the 
ultra-premium Parisons Liberty brand of wheat products. The success of this venture led 
the group to acquire several flour mills and key brand names. Parisons with its rich 
experience and expertise in the field of food- processing and trading, has well succeeded in 
planning, implementing and running of new projects, as well as, taking over sick and ailing 
units and making them viable in the shortest possible time. This has led to the emergence of 
Parisons as the largest producers and marketers of wheat products and edible oils. Out of the 
31 active flourmills in Kerala 6 major flourmills with a total capacity of 600MT is presently 
owned by the group. Our presence in the market can be gauged by the fact that 3 out of 6 
flourmills in Kozhikode District. 
Plans are on the anvil to revive the operations of a defunct flour mill of 100 TPD 
capacity located at Kuttipuram which was already acquired from the KSIDC in 2002. The

COMMODITY TRADING 
What began in 1982 as a small business of general merchants and commission agents 
for food grains and wheat flour products in the name of N K Mohammed Ali and Brothers 
has grown into one of the big trade houses in the market and it can be traced now in the most 
respected names of traders in big bazaar of Kozhikode. 
Edible refine oils and wheat flour products like Aata, Sooji, Maida ,Rava being very 
fast moving food commodities in trading the volume of trade handled by this firm has 
increased multifold within a short span of time. This partnership firm can control the groups‘ 
well-knit marketing network of dealers and distributors spread all over KERALA. Yet 
another partnership concern in the name and stale of PARISONS EXPORTS Inc. does the 
international sourcing of basic raw materials in key food of food products of edible oils and 
grains.. 
FLOUR MILLING 
Having established a study food hold in trading activity the group embarked on 
strategic business expansion mission and setup its first flour mill of PARISONS ROLLER 
FLOUR MILLS Pvt Ltd at West Hill, Kozhikode in 1992. Consistent progress is being 
attained in this activity and the group presently owns armada of flour mills spread across 
different districts in the state of Kerala from Trivandrum Flour Mill P Ltd in Trivandrum Dt., 
Kodandram Roller Flour Mills P Ltd. Angamaly in Ernakulum Dt., Khemka Flour Mills P 
Ltd., at Chungam West Hill, in Kozhikode Dt. Etc. All the milling plants are running with 
machinery of state of the art technology.

VEGETABLE OIL REFINING 
After establishing after market leaders in wheat flour products it was vegetable oil 
refining activity waiting for the group to get on with next. In its verification plan the group 
launched vegetable oil refining plant at west hill Kozhikode in the name of PARISONS 
ARISTECH Pvt Ltd in the year 1996. Ever increasing demand for the refined oil products of 
the company like refined bleached and deodorized palm oil, Vanaspathi etc. in the brand 
name LIBERTY GOLD prompted the group to increase its refining capacity as a result of 
which a different unit in the name of PRISONS FOODS Pvt Ltd was established in KINFRA 
food park at Kakkanchery in 2001. 
INFRASTRUCTURE LEASING 
In the continues foray of the group in different types of business the idea of setting up 
of Storage Tanks Farm in cochin Port trust area come to mind by sheer necessity. The 
inconvenience of associate companies in the vegetable oil refining activities to depend on 
other parties for storage purpose could be alleviated. The group garners substantial amount of 
rental income by leasing out additional storage capacity in the infrastructure facility to other 
interested parties. 
ECO TOURISM 
Promotion of ecotourism is an activity going by side of Agriculture in Beautiful 
Estate and Plantations in the Hilly areas of KERALA state like Mananthavady in Wayanadu 
District .The group own vast area of rubber plantation and Tea Estate. The different locations 
of the areas are at KK road Mundakkayam in Kottayam Dt, Chirakkara Dt, Talappuzha, 
Tatamala, etc. in Wayanadu Dt. Which are the places making our State ―Gods Own Country‖.

RUBBER PLANTATION 
The Group entered in to plantation segment by acquiring 1665acres of Rubber Estate 
and processing facilities located in beautiful part of Kerala state at KK Road, in Idukki 
district. The estate comprises of two divisions namely BOYCE Divisions and 
PERUVANDANAM Division. Of this area 1400 acres of land is presently cultivated. About 
200 acres of non-cultivable Land is having rich deposit of SILICA About 30 acres of land 
consists of the roads buildings and other infrastructure facilities. The estate has drying yard 
smoke house for the total area and crepe factory to produce crepe rubber. Spurred by the 
increased level of prices of raw rubber the Company is poised to show impressive results. 
EXPORTS 
The Export Division of the Group was set up with its corporate headquarters at 
Calicut. It is engaged in trading of edible oils after packaging. The firm purchases the oils 
from other Group Units who are major importers. A Cochin office was also set up to speed up 
the import operations of the group. 
Our exports division caters to the needs and requirements of all our overseas buyers. 
Over the years, we have experienced continuous growth both in terms of physical and volume 
of production allowing us to be one of the most competitive exporters in India.

in business. Personnel management is a specialized branch of management that deals with 
people. Human beings are the principal asset of a business or industry. People are the main 
subject matter of personnel management and it is its business to educate employees, line and 
staff and supervisors to place a high value of the dignity and work of the individual human

can be routed by a line manager through the divisional head to GM, HR. The HR divisions

committee. The manpower committee which comprises of members of Top management, HR 
and General Manager meets every alternate month to discuss and assess the requirement put 
forwards to all divisions. Based on that committee‘s recommendations the HR division 
processes these positions. The requirement and selection process for Kerala positions are 
completed within one month, where as for outside Kerala it takes at least two month. 
The H.R dep. takes care their employees by providing provident fund, ERS, gratuity 
and looking after medical needs of their employees and families at present the administration 
purchase and human resource department is headed by one manager except in administration 
where he is assisted by two others there are total of almost 36 people working under him. 
RECRUITMENT AND SELECTION 
The key recruitment policy of the Group aims at ―Quality and Affordability‖. In 
Parisons Group the sources of recruitment includes both internal and external. Whenever any 
vacancy occurs somebody from within the organization is upgraded, lie outside the 
organization, which includes new entrants to the labor force, retired experienced person‘s etc.

Workers are recruited on contract basis from the state of Bihar.

A brief introduction forms the start of the career of the selected candidate by which 
the induction programme starts. It is the duty of the Human Resource department to get the 
staff introduced to the organization whereas the candidate is familiarized with by the

Proper and systematic record keeping is the essence of an efficient accounting 
system. In the multi account environment of Parisons Group, clear demarcation of jobs is 
imperative for proper record keeping. 
CAMS 
The basic financial software used by Parisons Group is Cams, which is developed 
by their software division Soft Guide Technologies Pvt Ltd to match with their requirements. 
It is user friendly software with icons of all types of entries and reports. All the 16 entities of 
the group are using the same software. Separate accounts are maintained in Cams for 
consignment sales of each concern, directors personal accounts and corporate office accounts. 
MILL SOFT 
The software Mill soft is used for inventory accounting and using in our factories. 
The raw material purchase, issue of production and sales entries with quantitative details are 
entered in Mill soft. Financial aspects of inventory entries are automatically updating on 
conversion to Cams. On converting of Financial and Inventory accounts to Head office 
through telephonic modem all the inventory and financial accounts will be updated at Head 
Office. 
BMS (Computerised Bank management system) 
This is also self-made software developed for accounting of banking transactions 
only. This program is used for accounting of bank entries of all banks of all entities except 
Soft Guide Technologies Pvt Ltd. Reconciliation and other report facilities are available in 
BMS. Banking transactions entered in BMS are automatically converted to respective firms‘ 
accounts in Cams except for few where bank entries are to be separately entered in Cams. 
The accounts executive has to convert the transitions entered in factories in their accounts 
daily without fail. The Group concerns balances have to be reconciled periodically and 
multiple accounts with same name shall be strictly prohibited. The correctness of converted 
data in Cams has to be verified by comparing total figures of Sales, Purchase etc. in Cams 
with Mill Soft.

communication to the suppliers. 
PROCEDURE FOR RAW MATERIAL RECEIVING: 
Raw material received by the company by supplier‘s name, item, description, 
vehicle number, and load number, quantity as per supplier declaration. The incoming raw 
materials are inspected by the security in charge of load will not be accepted and the 
supplier‘s are duly informed. The material should inspected by the quality control officer‘s of 
the time of the

capacity. Also the plants are located throughout Kerala making centralized productions very 
difficult 
PARISONS has an effective day out of machinery. The machines work around the 
clock 24 hours a day the plant at Kozhikode was set up in 1992.in 2000 its capacity has 
increase from 80 tons to 120 tons per day, making it one of the biggest plants in kerala the 
plant is build in a four story building. It is in such a way that expansion of capacity can be 
done easily it is placed in an area of three acres in west hill, Chunkam touch in the national 
highway making transportation easier. 
PRODUCTION PROCESS 
This entire production process consists of series of operations carried out 
sequentially to obtain the final product. Raw material procurement is from Madhya Pradesh, 
Uttar Pradesh, Gujarat, and during season from Australia. 
1. MILLING 
(a) INTAKE: 
In view of the method of storage and transportation, the wheat arrives at the mill 
mostly in gunny bags of 100 kg weight & is transported to the mill in lorries & by rail 
transport system (I wagon with 200 ton) as a bulk material. At the arrival point, samples are 
drawn & examined for the colour, smell, hardness, moisture content of the wheat as well as 
percentage of foreign matter, hectolitre weight &gluten percentage. 
The gunny bags are opened into an intake hopper, which is is kept at a height of about 
1m, and is covered with a coarse impurities. 
Mechanized handling of the grain at intake requires a few more additions like utilizing 
a chain conveyor. The flour mill has 2 silo with a storage capacity of 2000 ton each. There 
are different qualities of wheat procured which does not allow all the wheat to be stored in 
the silos. This causes some wheat to be stored in the godown also. 
There are 2 types of conveyers used, Screw and Chain. It is the chain conveyer used for 
the storage of wheat in the silos. A jally is present where the wheat bags are opened where

the first purification taking away heavy materials occur. Then with the use of the elevator and 
hopper, the wheat is moved for storage before which again purification takes place using 
Drumfire which works with Jally inside. 
Cleaning takes place in three stages,

 2nd cleaning 
.II. MILLING SECTION 
To reorient and to draw the attention, it is reminded again that the object of milling 
process is tc remove the bran layer from the endosperm to flour. It is the function of the break 
rolls to remove the bran and the reduction rolls to reduce the endosperm. In the best design 
and operated breaking system, it is never possible to completely remove all the bran without 
pulverizing some of it and allowing it to become mixed with the liberated endosperm. This 
material deteriorates the quality of the flour and increases its ash content. It is the function of 
the purifiers, scalping sieves in the reduction system and the residue or tilling section of the 
mill to remove a completely as possible, particles of bran that are released with the 
endosperm. Thus for grinding of wheat into flour, we use break rolls, scratch rolls and 
reduction rolls and after each grinding on these rolls, the ground stock is traded in a plan 
sifter, and the graded products are sent t different destinations depending on the nature of 
processing and quality. 
These intermediate products of the break system are grouped together according to their 
puril and granulation. With the 5th granulation, the individual fractions are of very close 
granulaticrange. This help in very good purification of these stocks on the purifiers and the 
production of flour with very low ash content, and different grades of flour is possible 
a) BREAK SYSTEM 
The object of the break system is to open the grain and scrap out the endosperm 
carefully from the bran pieces, without fragmenting them. The pressure on break rolls is

gradually increased from first break to the lost break, to achieve gradual and almost complete 
removal of endosperm from bran at the same time taking care to see that bran is not cut 
unnecessarily from the first break to last break.

With the decrease in the roll gap, the break release i.e. the amount of material that can 
pas through a 20 wire sieve(l 110/u), when sieved under standard conditions increase. 
After each grinding operation on break rolls, the ground stock is graded in a plan sifter 
and the graded products go to different destination. The coarse break stocks goes to next 
break passage flour is separated out as finished product semolina and middling‘s are purified 
and the dust ground on reduction rolls. 
b) SCRATCH SYSTEM 
The complete semolina from the purified are tested on scratch rolls. The scratch rolls 
can be either fluted or smooth, depending on the hardness of wheat. The function of scratch 
passage is to produce maximum amount of profitable semolina and least amount of flour. 
c) REDUCTION SYSTEM 
The reduction rolls are smooth rolls. Purified stocks as well as the dust from break 
system are brought onto the reduction passages. It is essential that the smooth rolls have 
rough surface, but not absolutely shiny surface, for the efficient grinding of the stock coming 
to reduction passages.

The reduction rolls have a roll differential of 1:1.25. The ground stock is graded in a 
plan sifter. The branny stock is sent to the next middling passage, whiles the flour, is 
separated out as finished product. 
d) PURIFICATION 
The purification is essential, when the flour with low ash content is required to be 
produced. The stocks to purifiers come from the first three breaks passages and comprise of 
pure endosperm particles to which a pieces of bran is adhering (composite semolina) and pure 
bran pieces. The difference in their densities and the air resistance among these components 
are made use of to separate pure endosperm particles, which are subsequently ground into 
flour on heads reduction rolls, whereas the composite semolina is sent to scratch rolls and the 
branny stock to break rolls. 
e) SIEVING 
Sieving is done on a plan sifter. Plan sifter is a stock of sieves on which ground stocks 
ungraded according to size. The stocks thus graded are directed to different machines such a 
Purifiers, reduction rolls, bran finishers as well as packing as finished products, depending on 
the characteristics of the products. 
f) BRAN FINISHER 
The bran finisher assists the last break and reduction rolls, in recovering the 
endosperm from the coarse and fine bran. 
g) DETACHERS 
These are also called as flake disrupters, as they disintegrate the flakes of pure 
endosperm produced as a result grinding endosperm particles on smooth reduction rolls. The 
detachers are positioned between the reduction rolls and the plan sifter. They prevent the 
flakes of endosperm pieces tailing over to the end of the mill. In the modem short system of 
milling, they play an important role in realizing higher rate of extraction of flour.

h) CONVEYING OF THE STOCKS 
The suction pneumatic system is the usual mode of conveying of mill stock in the 
modem mill, because of the definite advantages. For horizontal conveying alone, screw 
conveyors are used. The bucket elevators are still widely used, in Indian mills. 
i) TYPICAL FLOW SHEET 
For an understanding of the entire millings operation, a flow sheet is designed and 
herewith appended, to depict the progressive milling of wheat in a 4-break system with a 3rd 
granulation The end products Maida, Sooji/Rowa, Atta, Germ, Coarse Bran and Fine Bran 
are also shown. 
j) PACKING OF FINISHED PRODUCTS 
In almost all the Indian mills, with exception of very few the finished produce straight 
away all the 24 hours. However, to ensure uniformity of the finished products to supply the 
products of definite products is essential.

Raw material procurement is from Madhya Pradesh, Uttar Pradesh, Gujarat, and during season from Australia. 1. MILLING (a) INTAKE: In view of the method of storage and transportation, the wheat arrives at the mill mostly in gunny bags of 100 kg weight & is transported to the mill in lorries & by rail transport system (I wagon with 200 ton) as a bulk material. At the arrival point, samples are drawn & examined for the colour, smell, hardness, moisture content of the wheat as well as percentage of foreign matter, hectolitre weight &gluten percentage. The gunny bags are opened into an intake hopper, which is is kept at a height of about 1m, and is covered with a coarse impurities. Mechanized handling of the grain at intake requires a few more additions like utilizing a chain conveyor. The flour mill has 2 silo with a storage capacity of 2000 ton each. There are different qualities of wheat procured which does not allow all the wheat to be stored in the silos. This causes some wheat to be stored in the godown also. There are 2 types of conveyers used, Screw and Chain. It is the chain conveyer used for the storage of wheat in the silos. A jally is present where the wheat bags are opened where

MILLING SECTION To reorient and to draw the attention, it is reminded again that the object of milling process is tc remove the bran layer from the endosperm to flour. In the best design and operated breaking system, it is never possible to completely remove all the bran without pulverizing some of it and allowing it to become mixed with the liberated endosperm. This material deteriorates the quality of the flour and increases its ash content. It is the function of the purifiers, scalping sieves in the reduction system and the residue or tilling section of the mill to remove a completely as possible, particles of bran that are released with the endosperm. Thus for grinding of wheat into flour, we use break rolls, scratch rolls and reduction rolls and after each grinding on these rolls, the ground stock is traded in a plan sifter, and the graded products are sent t different destinations depending on the nature of processing and quality. These intermediate products of the break system are grouped together according to their puril and granulation. With the 5th granulation, the individual fractions are of very close granulaticrange. This help in very good purification of these stocks on the purifiers and the production of flour with very low ash content, and different grades of flour is possible a) BREAK SYSTEM The object of the break system is to open the grain and scrap out the endosperm carefully from the bran pieces, without fragmenting them. The function of scratch passage is to produce maximum amount of profitable semolina and least amount of flour. c) REDUCTION SYSTEM The reduction rolls are smooth rolls. Purified stocks as well as the dust from break system are brought onto the reduction passages. It is essential that the smooth rolls have rough surface, but not absolutely shiny surface, for the efficient grinding of the stock coming to reduction passages.

The detachers are positioned between the reduction rolls and the plan sifter. They prevent the flakes of endosperm pieces tailing over to the end of the mill. In the modem short system of milling, they play an important role in realizing higher rate of extraction of flour.
