1. Smothered Okra and Chicken
INGREDIENTS:
Chicken breast cut in strips
3 tbsp. olive oil
1 large onion chopped
Salt, pepper, cayenne to taste
1 bag frozen okra
2 small cans tomato sauce
1 small can rotel tomatoes
INSTRUCTIONS:
In skillet brown seasoned chicken in oil. After chicken has browned on both
sides, add onions to the chicken and cook them down until transparent. Add
½ cup water for a little gravy. Next add frozen okra and cook 20 minutes
then add canned tomato sauce and rotel. Let simmer 30 minutes. Stir
occasionally to prevent sticking or burning.
