History Of Cupcakes
Cupcakes were first invented in the late
        1800s and the early 1900s.
 They were originally named cupcakes
  because, people would scope out cake
   batter into cups and that is how they
measured how much cake batter to use.
 The first person to ever invent cupcakes
        was Baron Von Cupencak!
Food historians do know that the term
"cupcake" first appeared in 1828. This is from
                  Wikipedia:

 "The term "cupcake" was first mentioned in
1828 in Eliza Leslie's Receipts cookbook. In the
 early 19th century, there were two different
uses for the name "cup cake" or "cupcake". In
  previous centuries, before muffin tins were
 widely available, the cakes were often baked
in individual pottery cups, ramekins, or molds
and took their name from the cups they were
                    baked in.

am I had to do a little
research on where red
velvet cupcakes
originated. Here’s
what I found out
according to

hotel, a precursor to the famous “Neiman Marcus cookie scam”
 story (with the same level of credibility). But thanks to a stash
of ancient Southern cookbooks, it stated that velvet cakes date
back to at least 1873, when they were mentioned in Dr. Chase's
   family physician, farrier, bee-keeper, and second "receipt"
 book. Alvin Wood Chase writes, “There is quite a tendency, of
late, to have nice and smooth names applied to things, as well
    as to have nice things; hence we have Velvet Cake, Velvet
   Cream, etc.” Chase goes on to provide "receipts" for both”.

  your equipment and ingredients before you
  begin.
• This will give you a chance to purchase
  equipment and ingredients you may be
  missing before you starting baking.

Cupcake Liners
               Cupcake Liners are
                    used to make
                    your cupcake
                   just as cute on
  They come in    the sides, as on
    a variety of          the top!
     fun shapes
    and colors!
Add some Sprinkles! 
• 2 1/2 Cs cake flour       • 1/2 C butter, softened
• 1 tsp baking powder       • 1 1/2 C sugar
• 1 tsp salt                • 2 eggs, at room
• 2 tablespoons               temperature
  unsweetened cocoa         • 1 tsp vanilla extract
  powder                    • 1 C buttermilk, at room
• 2 oz. red food coloring     temperature
  (2-3 bottles depending    • 1 tsp white vinegar
  on size)                  • 1 tsp baking soda
Instructions for Making the Red
             Velvet Cupcakes
Step 1
Preheat oven to 350 degrees. Line two 12-cup muffin tins with
cupcake papers.

Step 2
Mix together the cake flour, baking powder, and salt into a medium
bowl; set aside. In a small bowl, mix food coloring and cocoa powder
to form a thin paste without lumps; set aside.

Step 3
In a large bowl, mix butter and sugar together until light and
fluffy, about three minutes. Beat in eggs, one at a time, then beat in
vanilla and the red cocoa paste, scraping down the bowl with a spatula
as you go.

Step 4
Add one third of the flour mixture to the butter
mixture, beat well, then beat in half of the buttermilk.
Beat in another third of flour mixture, then second half of
buttermilk. End with the last third of the flour
mixture, beat until well combined, making sure to scrape
down the bowl with a spatula.

Step 5
In a small bowl, mix vinegar and baking soda. Watch it
fizz! Add vinegar mixture to the cake batter and stir well
to combine.

Step 6
Using an ice cream scoop, fill cupcake cups with cake
batter (they should be 2/3 – 3/4 full). It will make about
20 cupcakes. Place muffin tins on the middle rack of a
preheated 350 degree oven. Bake for approximately 20-
22 minutes, rotating pans halfway through. Cupcakes are
done when a toothpick inserted in the center comes out
clean. Check early and don’t overbake!

Step 7
Cool the cupcakes in their tins on a wire rack for 10
minutes then remove and allow to cool completely before
frosting.
Ingredients for Cream Cheese Frosting

1 sticks (1/2 cup) butter, slightly softened
8 oz cream cheese
3 cups powdered sugar
1 tsp. vanilla
Instructions for Cream Cheese
   Frosting for Red Velvet Cupcakes
Step 1
In the bowl of an electric mixer, beat the butter and cream cheese until
smooth. Slowly add the powdered sugar and mix until everything is
combined.

Step 2
Add the vanilla. Beat all the ingredients together until you have a
smooth, creamy frosting.

Step 3
Once the cupcakes are completely cool, spread a big spoonful of
frosting on top of each cupcake or you can use a piping bag to give
them a little decorative swirl. Top the cupcakes with a few red sprinkles
and they're ready to serve. With this recipe you can enjoy a sweet taste
of the South anytime.
