2. WHAT IS KOSHER?[12]
• “kosher” comes from the Hebrew word “kashrut” which means “fit” or “proper”
• “Kosher” is a term used to describe food that complies with the strict dietary standards
of traditional “Jewish law”.
• These laws determine which foods may be consumed and how they must be produced
, processed, and prepared
• The roots for these laws are from “the Torah”.

3. GUIDELINES FOR FOODS UNDER KOSHER[3]
• THREE MAIN KOSHER FOOD CATEGORIES
1. MEAT(FLEISHIG)- mammals or fowl, as well as products derived from them ,

2. DAIRY(MILCHIG)- milk , cheese , butter, and yogurt
3. PAREVE- any food that is not meat oe dairy , including fish , eggs , and plant
based foods.
Plant-based foods - Grains, nuts, and seeds are all found in plant-based foods.
Baked bread and grains along with Seed, oil, and nuts are also included
• NOTE- Meat cannot be eaten with dairy under any circumstances.
• Kitchen should have 2 different utensils for meat and dairy , no contamination should
be their.
• Bloodstains should not be present in eggs, and fish should have fins and scales.
• Even wine has a Kosher classification, and the ingredients used must come from a
Kosher source.
4. FORBIDDEN ANIMALS IN KOSHER
• Non-ruminant ungulates (pigs, camels, donkeys, horses)
• Rodents and hyraxes
• Arthropods (except locusts)
• Predatory animals
• Reptiles and amphibians

8. WHAT IS HALAL?[3]
“Halal’’ means “permissible” or “lawful” in Arabic.
Halal food follows the Islamic dietary law as described by the “Quran”.
It has not been prepared, processed, transported or stored using any appliance or
facility that was not free from anything unlawful according to Islamic Law
All food should be prepared, processed, packaged, transported and stored in such a
manner that it complies with the Codex General Principles on Food Hygiene and other
relevant Codex Standards.
11. GUIDELINES OF HALAL FOOD[2]
•The person should be a Muslim who is mentally sound and
knowledgeable of the Islamic slaughtering procedures.
•The animal to be slaughtered should be lawful according to Islamic
law.
• The animal to be slaughtered should be alive or deemed to be
alive at the time of slaughtering.
•The phrase “Bismillah” (In the Name of Allah) should be invoked
immediately before the slaughter of each animal.
• The slaughtering device should be sharp and should not be lifted
off the animal during the slaughter act.
•The slaughter act should sever the trachea, oesophagus and main
arteries and veins of the neck region.
12. MEAT &
POULTRY
Animals must be Halal.
Animals must be slaughtered by a sane,
adult Muslim while pronouncing the
name of God.
A sharp knife must be used.
This group of meat & poultry contains
four out of five haram categories.
FISH &
SEAFOOD
All Muslims accept fish with scales
13. MILK & EGGS
These products from Halal animals are
also Halal.
The predominant source of milk is cow
and predominant source of eggs is the
chicken.
All other sources should be labelled
accordingly
PLANTS &
VEGETABLES
These materials are Halal except
alcoholic drinks or other intoxicants.
Vegetables ane meats might be
processed in the same plant and on
the same equipment , increasing the
chance of cross-contamination.
